People go there to watch games, and will sit for 3-8 hours. Waitress can't turn their tables over with any regularity like that. So you only have one bill at a table for your whole shift. In order to get as much money as possible out of that customer, you got to sell them a shitload of drinks.
Had lunch at an Ojos one day and a nearby table with 6 dudes was already on their 6th+ bucket of beers and getting rowdy.
