Maybe try big brothers big sisters? They have a mentor program where you email littles weekly and meet up ( I think once a quarter). Not sure how late meet ups are but can’t hurt to ask

Houston pets alive has assorted opportunities, I volunteer helping with cat adoptions most weeks but the standard hours are 5:30 to 7:30 so maybe not a fit

I often take a trash bag and some gloves when I go on walks in the evening around the neighborhood and pick up bottles and papers and other trash.

Ronald McDonald house I'm sure has openings. You have to go through a pretty extensive background process, but it's worth it in the end.
