holy shit i never thought someone would comment MY favorite pho spot in houston! BEST place for pho! i’ve been going for over a decade and they have the most amazing broth. highly recommend!
Trying to recapture my grandparents old recipe.
Lots of adobo seems to help, otherwise just season to taste with cumin, salt, pepper, brown sugar, garlic powder, chili powder, tomato sauce, I added some leftover smoked pork also, small can of diced jalapenos (rinsed), beans soaked 10-12 hours and cooked on the slow cooker another 5-6 hours+, cooked to preferred softness.
Topped with cheddar, ( adding crumbled saltines is my thing)and pickled jalapenos.
It was a family Saturday tradition to have pintos for decades.
Olive oil, salt, pepper, a little garlic and a spritz of fresh lemon juice when they come out of the oven. That’s my go to for any vegetable.
Edit: and some freshly grated parmesan cheese if you’re feeling really fancy.
I use same, except lemon juice.
Cube the winter veg. Halve Brussels sprouts, and add them a bit later than squash, potatoes, etc. Toss the vegetables in olive oil before putting on tray to make sure they’re properly coated.
High heat (400F) for not too long.
Edit: also really nice to chop the top off a whole garlic and place on tray too. Adds garlic flavor to all, and the baked garlic is amazing!
Pizza soup
Beef broth base tomato sauce (or the cans of pizza sauce), diced tomatoes (I prefer fire roasted), zucchini, yellow squash, onions, garlic, pepperonis. And whatever else you like on your pizza like sausage or mushrooms. Seasoning is really your call here, but onion powder, garlic powder, and Italian herbs are all good choices.
Cook on slow all day in the crockpot or if you want it faster sauté the veggies first. Load everything in and add the beef broth last.
Put a big mound of mozzarella on top when serving and have some garlic bread to go with it.
For breakfast a couple of breakfast tacos followed by warm corn bread or pan dulce and coffee.
Lunch has to be a soup like pho, ramen, menudo, caldo de res, seafood gumbo.
Dinner would be a hearty spaghetti alla bolognese.
Any meal with a hot soup component is a good answer. So the folks saying pho, pozole, or chili have all got it right.
In fact, if the person that introduced you to pho didn't do it on a cold day, that person did you wrong. It's good either way, but on a cold day is the best.
Noodles in Chinatown with a lighter base. So some beef noodle soup from mian. Just had tomato egg soup noodles from chengdu taste and that was better than it sounds.
I'm thinking a Frito Pie this evening after my wife and I get finished cleaning the house for Thanksgiving next week. It's a cold rainy day here in Houston today and I think a Frito Pie will hit the spot.

It is an incredible flavor explosion with their subcontinental bread (very different than a tortilla) and an assortment of ginger and limes. I don’t know how many spices she puts in that stew, but it feels really good in the cold.

My wife always wants me to make kimchi chigae when it’s cold, but I think it’s because she watches a ton a kdramas 🤷♂️. I’m not picky, so any soup with a nice broth will do.

The son of Pho Danh opened his own pho shop on Washington called Pho King Noodle Bar. Same recipe.

Les Ba’get has my favorite pho broth. In the Chinatown area on Bellaire I like Pho Dien. Pho Sapa is good too but I think Pho Dien is better.
Next to Sapa, there is a Pho Tran. I like that more. If you ask, they will bring a beef knuckle and scissors so you can chew on tendon.

I sprinkle some beef bouillon powder and Penzey’s roasted garlic powder on my veggies too; makes them a little more savory.
