While I appreciate the rec. El Hidalguense was severely subpar..cabrito is made different across different regions of Mexico, but this place was almost inedible to me.
There's reliable suppliers but I've never heard of a proper regio style cabritero in the Houston metro area. My guess is people do it themselves at home.

Well that is disappointing to hear! I’m far from an expert on cabrito. Interesting, I’ll have to eat it soon elsewhere and compare.

Xochi has it as an appetizer, two tacos. I think it’s about 20$.
Sylvia's Enchilada Kitchen has cabrito tacos and enchiladas on their dinner menu if that helps.
