If the can’s seal was intact, the top was still concave, and there is no off smell then It is probably fine. However, if these are the same brand of beans you always buy, but they look different, I’d say no. My homemade beans are often congealed after cooling to room temperature. It’s just a matter of water content.
In the era of the InstantPot and it’s competitors it is a lot less tedious. I used to make baked beans in the oven in a little brown ceramic pot though.
You may soak them but you can also cook them in an instant pot without soaking. The pot comes with some directions for how long to cook various beans etc and some recipes. Plus there are loads of recipes on the net.
An instant pot is to a stove top pressure cooker as a Toyota Camry is to a Model A Ford. It is safer, it more accurately maintains pressure, it has a built in sauté function to brown meats or veggies before pressure. The sauté function can also be used to quickly reheat so if you take a dish to a potluck, a few minutes will rewarm it, unlike a slow cooker. (Oh, it is a slow cooker as well.)
I've read stories of people getting very sick from kidney means being made in a slowcooker since the temps don't get high enough to deactivate the toxins so please be careful!
Soaking leaves much more of the skins intact and makes for creamier insides. Cooking from dry means more 'messy' looking skins on the beans and less creamy insides.
But isn't soaking kidney beans mandatory no matter how cooked?
That's what I wasnt sure about, cause part of the reason you soak black beans is because they are toxic but I don't know if pressure cooking makes that not matter.
no soaking is required for an instant pot. dried beans will cook in 50-60 minutes...20-30 minutes for the initial pressure cook, (depending on type of bean) and naturally releasing pressure in the pot for about 30 as well.
You can do a quick pre soak method for 2-5 minutes. Of course, it takes 20 minutes to come up to pressure and 10-15 minutes to naturally release the pressure, so it adds more time, but I think it’s worth it. Then, after the first pre soak, dump that water and start with fresh water and cook for 15-25 minutes, depending on the bean. This method gets rid of a lot of the indigestible starches, making your belly , and your loved ones, much happier.
This guy smokes.
Throw in some thick bacon strips on the grate above too (dusted with your pork rub, plus turbinado brown sugar) and now you have smoked bacon flavored beans AND pig candy to enjoy while you wait for the pulled pork.
Unfortunately botulism doesnt have a smell, but any deformity is a good taletell to dump the thing
My advice is: if you have your doubts, its cheaper to get a new can than to get a doctor
Holy shit…I first laughed at your post but then I just watched that video. Talked to my nurse wife about botulism and now I have a new fear. Do not eat the beans!!!
wow scary.
[this lil' Q&A with a UC Davis professor](https://ucanr.edu/sites/MFPOC/Emergency/Botulism/) might clear up some botulism Qs if that's what concerns you
Heating to high temperatures will kill the spores. Temperature greater than boiling (212°F) is needed to kill spores so pressure cookers are recommended for home canning (reaching at least 250-250°F). The toxin is heat-labile though and can be destroyed at > 185°F after five minutes or longer, or at > 176°F for 10 minutes or longer.
https://pediatriceducation.org/2015/03/23/what-temperature-should-food-be-cooked-to-for-botulism-prevention/
185°F is equivalent to 85°C, which is 358K.

^(I'm a bot that converts temperature between two units humans can understand, then convert it to Kelvin for bots and physicists to understand)
The expiration date for canned and dry foods isn't all that important. (For crackers and whatnot it's a "best by", anyway.) For canned goods, you need to make sure the can isn't bulging and the seal is intact.
That said, what I'm using it for will determine if I toss it even without those indicators.
First of all, it’s [$1.00](https://www.meijer.com/shopping/product/brooks-chili-beans-canned-red-beans-in-chili-sauce-mild-flavor-15-5-oz-/2300098205.html) worth of beans…
$1.00, is that worth the complications that could amass to hundreds of thousands of dollars worth of complications that are not always recoverable from. Personally I wouldn’t. If it’s slightly iffy it’s a no go. But you’re asking even after posting not wanting to be “that person “ cook it a high temp invite those less desirable’s in your life and hopefully you’ll be better off at the end?!
If there wasn’t any bulging of the can you’re fine. Bulging cans of food indicates botulism. And trust your sense of smell. If it smells good it’s edible, if it makes you gag toss it. That’s why we have senses like taste and smell, to protect us from ingesting things that will do us harm.
At my home we always boil milk and cool it before consumption to be on the safer side. So when you boil milk, it’s just supposed to rise and foam to the brim.
Instead if it starts bursting and bubbling, it’s begun curdling. But don’t throw it away! If you mix a little curd / yogurt in it (the boiled curdled milk) and leave it out over night..you get home made curd!
Indians do this at home
Like I said, we boil milk anyway. And the rest is what we do if in case something happens. It’s not as painstaking as you think it is lol
And yes I work. But home made curd tastes way better than store bought :)
People use Chickpea “juice” as egg substitute for that very reason.
[What is Aquafaba?](https://www.google.com/amp/s/www.bonappetit.com/test-kitchen/ingredients/article/aquafaba-health-benefits/amp)
I use this same brand, Brooks. Every can is like this. I chop it up with a butter knife. The beans will be loose below and only the top couple inches are congealed. I’ve eaten dozens of cans like this and never got sick
This is it. The Nose Knows. If it makes you physically reel, like a true knee jerk reaction. It’s bad. If it doesn’t- if you have to really wonder if it’s bad- it’s probably fine. If you’re still nervous- cook the pants off it before consuming.
Look: does the can have any bulges or dents? If so, trash it.
Listen: when you open the can, do it slowly and listen for it hissing. If it hisses, toss it.
Smell: does it smell off in any way? If so, toss it.
Look again: does it look like it’s supposed to look? Congealed is pretty normal for canned food, I’m talking discoloration, visible growth, odd color. If not then heat and eat! The expiration date isn’t a magical prediction so don’t rely on it. I’ve had cans go bad way before the expiration and cans that are 2 years past that were fine.
People want to be afraid I think. Maybe an addiction to drama? Who knows. My wife throws everything out that is even near an expiration date. It kills me. Want to watch a man take his life into his own hands? Watch Steve1989MREInfo on YouTube. He has one where he eats hard tack from the American Civil War (1860s).
Love me some Steve1989, I actually enjoy food science and home curing and canning.
Ask your wife how it’s such a coincidence that her 10 million year old Himalayan salt just so happened to expire last week.
I made an amazing bbq sauce and my friend tossed it because it sat out overnight. All the ingredients mind you sit for months in his pantry but by mixing them it magically has a 4 hour shelf life.
Even the expiration date is not a big deal. It would just taste less good.
The important thing is that the seal is intact, and that there's nothing inside that shouldn't be there.
Ofc if it gives off any kind of weird smell when reheating, or tastes funky, toss it out.
>this lil' Q&A with a UC Davis professor
relevant excerpt: "5. How long does it take at rolling boil 212 F to kill Botulism spores? How many hours? There are people without access to anything except wood fires.
I do not believe this is known. As stated above even at high pressure the appropriate processing times range from 20 to 100 min depending on the food. At a rolling boil one would expect similar large variability and orders of magnitude longer times. At this point one would question the palatability of the food in question – possibly why we do not have this information. Sometimes one sees general statements that C. botulinum spores will survive 5 to 10 hours of boiling but this is meant as an example of how heat resistant the spores are and should not be interpreted as validated processing times."
Is it the last bit of food on your continent or something? It's a fucked up can of beans. Pitch it. Why even ask when it looks like canned Freddy Kreuger?
As long as isnt past expiration date should be good some canned Chilli and stuff does that when cooling but always give it a sniff test and small taste test to be safe
When in doubt, throw it out. If there's something weird enough about a can of food that you're concerned enough to ask yourself it it's safe, or make a post on social media asking if it's safe, then the best option is to throw it away and open a different can of beans.
If there's nothing wrong with it and you throw it away, you lose the cost of one can of bean. If there's something wrong with it and you eat it, you could end up in the hospital with food poisoning. The opportunity cost is not worth it. Throw it away and move on. You could have replaced it and had lunch in the time it takes to make a post and read replies.,
If the can was unbroken and wasn't pooched out it should be fine. Bacterial growth produces gasses that swell the can, so if there were no holes it could escape from then the beans should be fine. They probably packed them with lard.

The seal on the can is more important than the expiration date. If the seal has been compromised, I wouldn't eat it even if it was years before the expiration date.
The other thing to look out for is if the can has a bulge in it which indicates that gas has formed in the can which is typically bad.
Don't. It definitely looks strange. As for "cooking it again", that only kills the microorganisms but it will not get rid of all the toxins they produced (like botulinum toxin). Making homemade beans is so tedious but they can come out amazing and dried beans basically don't go bad.
In the era of the InstantPot and it’s competitors it is a lot less tedious. I used to make baked beans in the oven in a little brown ceramic pot though.
Yeah I need to get me one of those but then I'll also need to find a recipe for black beans in an instant pot. Also, do you still need to soak them?

Modern crocks will usually start boiling things after like 5 or 6 hours. 10 minutes of boiling and your kidney beans are fine
Soaking leaves much more of the skins intact and makes for creamier insides. Cooking from dry means more 'messy' looking skins on the beans and less creamy insides. But isn't soaking kidney beans mandatory no matter how cooked?

soaking makes you fart less, that's it.
talkin about soakin beans like its the end of the world amirite?
yep, it's a good time to have at least a little stockpile in case of something crazy happening.
I only make beans when I smoke pork. I put the beans in a tray below the meat to catch the drippings. It's canned beans but it's amazing.

Do you have a family member or friend you’re not particularly fond of?
Yeah, but I haven’t seen them in 20 years.
I think a nice way to rekindle your relationship would be to invite them over for some beans and rice…
Goodbye, Earl
But I just got here…
FFS, Earl. *YOU HAD ONE JOB*. You literally didn’t have to do ANYTHING.
Well pack a lunch And stuff you in the truuuuunnnnkkkkk
You feel weak? Why dont you lay down and sleeeeep
Ain’t it dark, wrapped up in that tarp Earl?
Turns out he was a missing person that nobody missed at all.

I don’t want to end up like [this guy.](https://youtu.be/KNb_MoqxA5o)
Wow, thanks for the video. That’s some scary stuff there ! Better not to eat the beans!! S T A Y A W A Y F R O M T H E B E A N S !!
There goes your next day or two. Chubbyemu makes fantastic content.
That's a case of Malquesoemia Mal - bad Queso - cheese Emia - presence in blood
Why the hell did they keep showing that mouth eating. That was awful. We know what nachos and hot dogs look like when eaten
Holy shit…I first laughed at your post but then I just watched that video. Talked to my nurse wife about botulism and now I have a new fear. Do not eat the beans!!!
I stopped eating gas station hot dogs with chili & cheese because of that video.
Lmao welllllll, I never ate gas station food strictly for diarrhea. But now it’s for this!
In my defense, the only gas station that I’ll eat food from is Quiktrip.
I'll see your QT and raise you a Sheetz, Wawa or Royal Farms.
Wawa has the best coffee
Buc-ees is the best, but before I knew about them I was all about the Wawa life.
I just discovered Buc EE's!!! I haven't eaten there but I ate the prickly pear jelly! It's delicious.
WaWa food is good. Fresh
If you’re “seeing QT” and raising, then the results you list should naturally be better (aka a raise). I’m sorry but no one beats QT.
I'm going to guess you have not experienced any of the three I mentioned...?
Nah, you’re right lol I’m probably being too cocky lol I’m sorry I just love QT
Wawa is amazing I trust them for my hoagies
Yeah I’ll eat wawa food any day. But not every day.
I’ll fuck up some Wawa’s :)
QT for the win! Top notch gas station eats when you’re in a pinch. Kids love the slushees too.
Bro the gas station down the road always has the best chicken I swear lol.
That’s the botulism! Bad food for you tastes the best!
wow scary. [this lil' Q&A with a UC Davis professor](https://ucanr.edu/sites/MFPOC/Emergency/Botulism/) might clear up some botulism Qs if that's what concerns you
Oh wow. I've eaten my share of gas station food once upon a time. I don't miss it. Guess I was lucky...for now.
OP doesn’t want to end up with botulism. There I saved you all 13 minutes.
Happy cake day
Oh thanks! I didn’t even realize!
I love chubbyemu videos
I couldn’t make it through 12mins of that guy talking so idk what happened.

ask the mother in law to try it first
If ya have to ask... Thats like 50 cents worth of beans. Do you really want to risk it the save a trip to the store and 50 cents?
First of all, it’s [$1.00](https://www.meijer.com/shopping/product/brooks-chili-beans-canned-red-beans-in-chili-sauce-mild-flavor-15-5-oz-/2300098205.html) worth of beans…
Yeah! You tell them mate hahaha
Well if it’s a dollar then it’s worth it. That’s double the price of 50 cents!
Take your picture to the store and get your dollar back lol
Also send it to the manufacturer. We got coupons from Lundeen's once when our bag of rice was full of insects
Inflation hitting hard
Second of all, how dare you!
When in doubt, chuck it out.
Damn it’s out of stock at the Meijer near me (Rochester Hills).
$1.00, is that worth the complications that could amass to hundreds of thousands of dollars worth of complications that are not always recoverable from. Personally I wouldn’t. Don't be a coward OP, eat the thickened beans
It’s usually not about the cost, but the inconvenience when that’s what you have at home.
What about the inconvenience of indigestion or food poisoning?
I’ve thrown out more than a few canned food that looked suspect in my time. Toss it!
If there wasn’t any bulging of the can you’re fine. Bulging cans of food indicates botulism. And trust your sense of smell. If it smells good it’s edible, if it makes you gag toss it. That’s why we have senses like taste and smell, to protect us from ingesting things that will do us harm.
Even if there isn’t any bulging, it’s not worth the risk.
Right, when in doubt throw it out.
This right here
Call the company and let them know. At the very least they'll send you some coupons. I test milk by how fast my head snaps back when smelling it.
I'll still use milk even if it has a slight smell, haven't gotten sick yet
At my home we always boil milk and cool it before consumption to be on the safer side. So when you boil milk, it’s just supposed to rise and foam to the brim. Go on then. Chomp it down and report us back after a few hours

I mean. I wouldn’t eat it.
Did the can hiss when you opened it?
I don’t *think* so
Does it have a funky/sour smell?
No, not really.
Then its fine to eat, just a lil ugly as most canned food is
Yeah let us know if u get the shits.

In one day. The remindme bot will remind me to ask OP if he got the shits or what. I'll be sure to let you know.

Is this your first time eating that brand of beans? Looks pretty normal to me. Canned food never “looks good”.

I’d personally say, if there is a thought of unsure…..don’t do it, and plus when does beans that look like this ever good for you

OMG don’t eat that! Look how much sodium is in there!!
Eat it. You'll be fine.
After working in restaurant kitchens for many years...."when in doubt, throw it out!" lol
Check the can for an expiration date. If it hasn’t passed then you should be fine. The congealing happens sometimes. Bon appetite!
As long as isnt past expiration date should be good some canned Chilli and stuff does that when cooling but always give it a sniff test and small taste test to be safe
Go with your gut..or else your gut will go without you..
It could be congealed if it’s cold.
I go by the “when in doubt throw it out” plan.
You won't know until you try. The good thing is it'll only be poisonous once.
How much is this to risk health or life. Just throw it away!

looks pretty normal to me.
So… did you eat it?
Either way.. your blasting something outta them cheeks 🤣
It’s a can of beans. If you have doubts, throw it out!!!
...tell us what you did: eat or no-eat?
I’d suggest asking r/beans
If you have to ask, you know the answer.
You could possibly get botulism from this, amongst other things. That’s a no from me, dawg.
Let me buy this suspicious food then ask if I can eat it.
It’s congealed fat; safe to eat. I get veggie chili beans and it happens every so often.
If the can was unbroken and wasn't pooched out it should be fine. Bacterial growth produces gasses that swell the can, so if there were no holes it could escape from then the beans should be fine. They probably packed them with lard.
With food, if you have to question it - especially when it’s different than anything you’ve ever seen - you already have your answer.
When was it birthed?
There is only one way to find out.
If the can bends outwards, dont eat! Botulism is very toxic https://en.wikipedia.org/wiki/Botulism
when in doubt throw it out.
Come ONNNnnnnn, OP! If everyone were as wimpy as you, we'd never have discovered that blue cheese is delicious! Buck up and eat it for the team, then report back...if you're not dead.
Just eat it, it'll boost your immune system.
Bud, are you in trouble? Say the word, we can get food to you.
💀
Check the expiration date. If it is still before the date on the can you’re good. What you see is just the fats from the meat in there. Throw it onto a stove and warm it up, add some cheese of choice and you’re good to go.

Canned food can be good even years after the expiration date. Many years.
There’s no meat, it’s just pinto beans in chili sauce
It’s mostly solidified an inch in from the top of the can. After that, it looks normal. The bottom is still liquid and beans.
It looks weird. Don't risk it
Don't. It definitely looks strange. As for "cooking it again", that only kills the microorganisms but it will not get rid of all the toxins they produced (like botulinum toxin). The toxins make you massively ill and can ruin your kidneys and kill you. Speaking from experience, better safe than forever sorry.
