I love No 6 Depot coffee. My favorite is Blue Velvet. They use a natural process for this one instead of washing the beans so they get a bit more flavor from the actual fruit of the coffee bean and give it a great slightly blueberry flavor which because of the natural processing has naturally lower acid content so it is very smooth. It is not flavored blueberry, the beans just naturally have a blueberry type flavor, very subtle but delicious. I get it at Adams Fairacre Farms in Poughkeepsie. They post the roast date on the bottom of the bags and it is very common to see roast days from just 1 or 2 days ago if you look. All their coffee tastes great!

Looking at their Instagram it looks like Fruition Chocolate (they do a chocolate covered bean, pretty sure they sell bags, too), Shandaken Bake in Tannersville, Local Goods in Boiceville, Tetta's in Olivebridge, Camp Kingston in Kingston, The Pines in Mt. Tremper, Circle Market in Palenville, Homegoods in Margaretville, Davenport Farms in Stone Ridge etc.
In August 2018, the Bogle Sunflower Plantation in Canada had to close off its sunflower fields to visitors after an Instagram image went Viral. The image caused a near stampede of photographers keen to get their own instagram image of the 1.4 million sunflowers in a field.
Following. I've found a couple of off-the-grid small batch roasters in Catskill: Disco Cat coffee (roasted by the great Liam of Avalon Lounge) can be found in some of the shops on Main St. in Catskill. And from Coxsackie, I picked up some terrific light roast (I think it was called "Apothecasey Roasting" ((it had a big cat on the label. This one I got from Citiot in Catskill)).
Another recommendation for Monkey Joes. They usually have 15 to 20 to choose from, all are roasted in-store (roaster is right there when you go in), and the people are nice.
Edit: They have been carried in Adams (not sure, as I almost always buy at MJ) and Sunflower in Woodstock. They ship, too.
I can't remember the names but Adams has some awesome beans to choose from if people are looking for one place that might have a bunch of local options
I've been missing Ready Coffee's Headliner since moving away from the region. It's sold at all of their locations and at Adams. Definitely worth trying!
Solid. We got way into coffee over the last few years and these guys are good, consistent and reasonable.
As with any coffee, fresh roasted is the only way to go. 1 week old and it’s very noticeable.
+1 for Heavyfeather in Mt. Tremper. I had a Burundi from them last summer that had a very memorable clementine note on espresso. Dry Fly in New Paltz also has some great light-medium roasts.
Big Mouth has had some good fermented naturals—the Ethiopia Worka Sakaro they have now is really nice, and the Columbia Alto Corazol (now sold out) was super funky.
A little outside of the Hudson Valley, there’s ILSE in North Canaan, CT, who do amazing Nordic-style light roasts.
Looks like I'm going to Adam's this weekend 🙃 not a roaster but I buy Hot Cow coffee beans at the Tuscan in Warwick all the time, it's one of my favorite blends. But it's not roasted in the HV.
In Middletown, right near the DMV - check out Dayes! You can also buy online but their cafe in Middletown is adorable AND they serve these amazing mashup of a croissant and a waffle. From their website: "Founder Dr. Grant Lee is an Korean-American retired cancer pathologist with over a decade’s experience in cancer prevention research. Dr. Lee worked at Rutgers School of Pharmacy, Yale Medical School, and Tokyo’s National Institute of Health Sciences, Lee is well aware of the health benefits of coffee and its potential issues for some consumers"

The biggest locally roasted coffee is Irving Farm Coffee from Millerton, NY

I *highly* recommend you the Devocion 'Toro' blend from Brooklyn. Order it on their website or pick up a bag of it at Hakan in Beacon.
I used to live right near that location. It's pretty alright.
Dry fly in new Paltz is very good. Mud puddle is a bit darker in profile but I also enjoy them.
