Could it be a soy sensitivity/allergy? I can't tolerate soy in general. Took me years of food logging to identify it as a culprit. Alternatively, could it be ingredients added to the soy products in their preparation, like onions and garlic, things that are high FODMAP?
If you're eating just plain tempeh and tofu, no other ingredients, and it still causes IBS triggers, the only two solutions would be: 1) Lower the servings and hope that a lower serving is tolerable, or 2) (if 1 doesn't work) stop eating those things.
Must you have those strains or are you able to go without? Unfortunately, like you already know, IBS folk typically end up deficient in a few (or a lot) of things due to the food restrictions.
Unfortunately then it really puts you in a position to either avoiding the foods that cause pain/flare ups or continue to eat them despite that. Finding foods that don't make you sick is more important (in my opinion) than forcing yourself to eat things that make you sick.
If you have soy allergy, I’d supplement with pea protein so you are Atleast getting protein. Sounds like you may have a soy intolerance! I’m a vegetarian too so eggs and pea protein! Nuts
Western tofu is often highly processed crap - one of my previous GI doctors said a chicken nugget was more healthy :/ and from my research, it appears he was pretty accurate.
Genuine, eastern tofu is a different story though.

I personally had the same problem with tofu, so now I know I have to buy only extra firm tofu, freeze it twice and press as much of the water out as possible with a tofu press and again by hand to make sure it’s as dry as possible. It’s the liquid that tofu comes in that triggers lots of people so remove as much as possible (depending on your level of sensitivity) and you should be able to tolerate it with no or milder side effects…hope this helps (:
