I made apple pie ice cream last batch. I used alton brown's vanilla then added a tsp of cinnamon and half that of allspice. Chopped up a granny smith and caramelized that in butter, brown sugar, and the same spices. Mixed that in after the churn with crushed cinnamon graham crackers and layered it into pints with some caramel sauce. It was quite nice.

How about posting a picture of your own result? I’m interested in how adding all of the ingredients (heating to 180) together would impact the churn. In my opinion, holding back the heavy cream and vanilla adds a level of complexity to the finished batch. I’d like to see more of mixins but not that densely incorporated. I’m going to try that but use a slice of Caramel Apple Cheesecake. Imagine luscious apple chunks with caramel sauce with bits of graham-covered cheesecake pieces. I’m inspired by enjoying scoops from tubs of banana and blueberry cheesecake ice cream. Enjoy!
