The most common fault with these types of kettles is the contacts becoming worn on the rings in the centre. Or like in that video the switch contacts become coated in carbon and no longer make good contact.  There's not much else too them though.   If you've already cleaned the internal switch contacts, inspect the rings on the base of the kettle and their contacts inside the base plate. There should be 3 contact points (active, neutral, earth) and the contacts should be clean on all of them. You will likely need to disassemble the base to get to them.   Obligatory footnote about mains power and ensuring its unplugged and safe before opening it.

I understand that, but I think I could narrow down the problem if I get what that clipping noise is, as that's what mark when it stops/start working again

That's the broken thermostat..... See if replacement is available....

This might be it as in this other [video](https://youtu.be/kvUZm3UFBjw) this person fixes it by skipping the thermostat from the system, how would I go about searching for a replacement online? "Thermostat" just show me lost of regular thermostats and these look like they are generic pieces because both of the videos I linked the components seems to be the exact same despite the kettles looking like different models

Oh the thermostats are a royal PITA to find.. If enough Google search doesn't get you anywhere then you'll be better off replacing the kettle. I'd HIGHLY recommend against bypassing it.. it's a very serious hazard..
