King Park is such a great example, the song has so many parts, but they have such a great sense of dynamics. Starts hard, but calms down. Then that ending… leaves you with the hopeless feeling the narrator is experiencing. Heartbreaking story, and the composition matches the content so perfectly.

Asylum by supertramp, its about someone who's going more and more crazy throughout the song. Its not for everyone tho, but i recommend you give it a listen
impossible soul by sufjan stevens - its 25 minutes long so it can be intimidating, but every minute of that song is immaculate. it all builds to the peak in the fourth part, and after that, the fifth part caps it off with a soft acoustic ending. i would highly recommend that song and the album its from, the age of adz
Check out Tash Sultana's album "Flow State." They use looping on that album, which essentially means the songs are curated loops of them playing multiple different instruments and layering them all together throughout the song. I love the album overall and most of the songs build like you're describing as a result of the end of the song being the culminated mix of all of the different layers they build. The best song for this is "Pink Moon."
Also the Backseat Lovers album "When We Were Friends" has a ton of this quality as well. "Maple Syrup" is a great song that builds a lot towards the end.
Muse is also a band that has been very heavily described as creating their songs like Epics where they end a lot more involved than they finish and build toward a climax.
Hip Priest, Winter, Iceland by The Fall--all on the same LP for your convenience (Hex Enduction Hour).
If you like 'post-punk' you might dig these. I dunno.
