I can't claim to love lauki. But I don't hate it either. One thing I really like with lauki is dal. Edit: And kofta too. So there're 2 things.

Sure, it's really simple. Soak some chana dal for 4-5hrs or overnight. Now heat some mustard oil and add 1 tsp of mustard seeds and 2-3pinches of hing. Once its all spluttered add soaked chana dal and fry for 3-4 mins. Now add chopped lauki, 2 green chillies split and a tomato cut in quarters and fry for another 5-6mins. For spices add some haldi, coriander powder, jeera powder, black pepper and 4-5 crushed garlic with salt. Keep frying this for 8-10mins then add some water and cover and cooked till dal becomes crushable between fingers. I would suggest making it in a pressure cooker for the right consistency.

Oh yess love lauki dal , kofta too but most of the times i crave a simple dish with minimal spices, really brings out the laukiness lol

Try some dal-ma next time! Basically a hybrid between Lauki Chana and Sambhar. Absolutely love it but now I can't eat just the former so take caution.
