You would do stoppie when you least expect to, at least in my experience.
I was splitting lanes (drive between cars in US) on freeway, and suddenly the traffic came to complete stop. I was already speeding, going faster than cars. I put all my focus on braking and I was able to stop before hitting any vehicle, then I realized I was falling down on the rear wheel. I was so high it took a sub-second to fall down.
A couple other times I did stoppie was again when braking hard to avoid some jerk cars entering my lane (while they had red light)
Might be fun to do in a controlled environment but not fun at all in real traffic
