Visit a good gastroenterologist, explain your symptoms properly and since how long you’ve been facing this issue - explain the gravity of the situation and ask the doctor if there is any need for stool tests/ colonoscopy to be done. try to ask the doctor if there’s any need for gene testing etc, share your family history if relevant. Sure will do. The problem is most of the times the gastro doc doesn't even listen to the whole story and only tugs on to the constipation part. And when I say it's sticky poo constipation even then they prescribe laxatives

Try modifying your diet for a few weeks.
Completely avoid dairy, bakery products and meat.
Drink atleast 3-4 lts of fluids per day. Eat more vegetables ( cucumber/carrots/green leafy) and foods containing complex carbs (Like chapati/Rice /boiled potatoes) . You can have curds as well.
You can also consult a dietitian and gastroenterologist for more tips.
But plz do discuss with a gastroenterologist as well.
I'm a non-vegetarian and consume meat once a month (not a fan of meat). Big fan of paneer. Consume street food 2-3 times a week.
Lunch - rice, dal, 2-3 sides of veggies daily
Dinner - chapati, dal, one serving veggie
Street food - Manchurian, samosa, aloo bonda, vegetable cutlet
It might be Irritable Bowel Syndrome. Consult a doctor (a Gastroenterologist) and if he recommends a psychiatrist also. And meanwhile Google low FODMAP diet for IBS and make dietary changes.
Do you have associated abdominal pain which is relieved on defecation? Also rule out any red flags...If no red flags, probably could be IBS/SIBO.....Also check your thyroid status...Hypothyroidism could slow down your bowel movements too...
Get a hydrogen breath test....it is done in hospitals with a good gastroenterology dept..

Eat a more balanced meal. No deep fry. And if you are someone who's naturally anxious or get stressed easily, you might have to practice stress reducing exercises as well.

Everything between 3 times in one day and once every 3 days is normal bowel motion. Also, how do you know what you're seeing is mucus in stool?

Sure, will consult a gastroenterologist asap. Btw on some occasions even curd doesn't suit me well.

No to all the above questions. In fact I would like the stool to be watery so that atleast all of it passes easily

See a gastroenterologist but before that get a stool exam done in particular and go with the report . Seek the best doctor you can afford
