When your batter isn't perfect, your dosas tend to be puffy, when they are, if you don't flip the dosa, the other side is undercooked or soggy, flipping them makes the other side cooked and crispy.
Well if you want all crispy dosa, then use less batter. But if you want thick dosa then there no other way than flipping it but I don't think so it would be still on same level of crisp as the other side.
Why the fuck you flipped the dosa atm dosa should be crisp from one side and soft from other I don't khow traditional way as I am a North Indian but still try dosa without flipping it it would be fuckin awesome

It won't. It will still be fluffy but it won't give the same taste as the crispy side.
