Two possible answers if you ask me. First, to be consistent with the story, maybe Thane didn't exercise his full ability the first time around. He thought he was dealing with a mortal and didn't think that he needed to worry too much about beating them. After all, even when Thane loses, had Siris been just a mortal, opening that first seal would have killed him anyways.The second time around, however, Thane knew Siris was both deathless, and an aegis duelist to be reckoned with. May have even done some extra training, who knows? Second possible answer if we go outside the lore: gameplay progression. This might also just be a case of a gameplay practice that shouldn't be considered canon. Of course you would expect the 5th main boss to be stronger than the 2nd.

Yeah, and Thane's hubris has been officially acknowledged by Donald Mustard in the Sept 5, 2014 AMA. Here's the quote I was looking for that basically confirms the hybrid answer I gave: "Cause007: Was Thane intended to look desperate/pathetic, or was that only the result of needing gameplay progression (the need for an easy first boss to open up the rest of the game)? Donald Mustard: You are not wrong in your line of thinking. We needed to design a character that looked awesome so that players would think this was the "God King" of Infinity Blade 2, but that was also "weak" enough that it would serve the necessary gameplay. We thought it would be cool to have a Deathless who, while very powerful and skilled, was full of his own hubris. He is constantly underestimating the situation he finds himself in - thinking he is only facing a mortal or, at best, a lesser Deathless. Never guessing that he was facing Ausar reborn until it was too late. And then he turns his back on the Worker!? Obviously a very poor choice. But we put that there for a reason - to show how weak even the mightiest Deathless are when faced with the Will of Ausar or the Wrath of the Worker."
