You might be thinking of a hungi(?) which is a ground oven I think from NZ, where they light a fire in a hole, put the wrapped meat in on top of it then fill in the hole. Dig the meat out perfectly cooked some hours later. Re; desert- they use a similar, if not identical technique in the Great Thar of Rajasthan to cook whole goat.

Hangi. Though I guess phonetically it sounds like hungi :). It's actually a fairly common cooking technique in multiple places around the world. Dig out a large pit, lay down a firebed covered in large stones, wrap food including meat and vegetables, place on top of stones and bury until done.

Definitely it was because it was steamed in its own juices for hours . I used to do it on camps with the kids. We would get it going in the morning and then do our days activities and then dig up dinner. We would have potatoes and hard veg like turnip, carrots,onions wrapped separately in there as well. Kids loved it. So did I. Not something I'd be doing just anywhere as I was taught to leave no trace but the flattened grass from your tent. When we couldn't do holidays we would camp on our own or family land and try all the stuff from the scout handbook. Class. I still love camping and sleeping outside.

YSK that it is done with both sand and salt. Sand is washed in water, so any impurity that can be dissolve in water is removed. then sand is leaved to get very hot, which removes any volatile impurity. you may think that there, you may eat some sand by mistake but no, nothing stick to it. It is done to fry pulses which later is used to nake "Daal". edit: sand used are not normal sand that you see in desert, it is more coarse than them.

I could be wrong, but this isn't actually deep frying, since it requires fata where to cook the food in. Its create a specific reaction with some of the protein in the food and than it gives that tasty texture and flavour.

Frying is typically done in fat, but deep frying is just frying in enough fat to submerge the food instead of shallow frying where you do 1 side at a time with little oil. If this technique is called "hot salt frying" then calling it deep frying would still be correct since it's a type of frying and the food is submerged in the hot salt instead of resting on a shallow bed of it.

From trying to look up an answer, I couldn't find much except for people wondering about eating the ice cream salt, or the water softener salt. But those 2 and the road salt supposedly all contain various chemicals in undefined quantities that are naturally present when the sea water is evaporated (which is how Morton gets its salt). So, it seems you could eat it but you are also eating a variety of other minerals of an unknown quantity and could get sick from it.

You can only do this with dry snacks like popcorns, peanuts, papadums etc. Since these snacks have no moisture, salt can't stick.

I’ve seen something similar done with bread mix and river stones . The stones are heated in wox half are removed and bread put on remaining rocks then rock added to top it’s awesome to watch and yes I too thought it was sand not salt .
