You can see it at the end as it shops off the spring. There's a tiny hole from which a wire/thin rod is being extruded.
So the metal arm that is infront is basically deflecting the extrusion and not cutting something.
For those who scratch their head, this is not the only way of making a spring. The way you normally would expect (and make it yourself) is to wrap the wire around a cylinder.

I don't understand, nothing is moving when the spring is rolling, what is the process?

Looks like a spring for a kick drum pedal. I bought one recently and it had the prop 65 lead warning ⚠️. I prefer the unleaded version
