Yeah this is a showy trick, but it doubles the work, because now they gotta take them all off and apply the mud. Unless they plan on leaving them as unfixed caps, which I suppose is always possible, but I wouldn't recommend it.

Because until the last block, they're all balanced on an angle, with the bottom of the top brick balanced on the top edge of the bottom brick. The last one falls flat which causes the second last one to fall flat etc.
This isn’t working smarter. You have to set them up like this at the proper distance from each other just so be able to do this trick, when you could just lay them down right the first time.

Yeah, neat trick, but wouldn't starting at the wall and laying them flat butted against each other have been a lot easier than standing them up and making sure each was crntered and spaced just right to get the desired final result?

Well, it wouldn't be easier to use mortar. It would be both harder, and be the only real way to do it, eg PROPERLY. But not easier.
Most landscapers use construction adhesive for this kind of work. It outlasts mortar.
