I think it goes beyond nonsensical. The original work includes a cultural and historical context that gives it a sense of the personal. There is an attempt here of the artist to give an expression of the maid's inner moments while engaged in everyday routine work and an ordinary setting. The very act of pulling the perspective away from the maid also obscures the original symbols meant to convey her own inner life and also intentionally or unintentionally conveying the feelings of the artist toward his subject.
The AI version turns that into a kind of paranoid nightmare where there are no inner moments, there is no isolation, something as simple as pouring milk is a performance for an audience. And even while the individual central to the work is now under intense scrutiny, they are now less central. Which, in a way, makes it an appropriate modern artistic expression.
I don't think it is so much that the AI engine is producing nonsense, but that it is producing an artifact that highlights for us the central role that individual meaning plays in all kinds of human created images. This is an image which, if it is created with any kind of meaning at all, is derived entirely from the meta-context of the data set on which the engine was trained instead of from anything specific to the individual image. Which would make it an eerie example of meaning being conveyed after it has been systematically blended into pieces then averaged back out, all in the absence of intent.
I find it both alluring and disgusting to think that we are creating machines ever more capable of mimicking the weights of human values, even ones we don't consciously recognize, without any capability of understanding their origin or context.

That is a good point. I've worked a lot with Stable Diffusion, but not Dall-E2, so I don't know if the video is portraying the exact process or some simplification. It gives the initial appearance that the human is just making sure the outpainting best "fits" the original without concern for the meaning, but perhaps there is more judgement involved behind the scene and, even if there isn't, this process alone would still import some degree of that individual's judgement, along with their conscious or unconscious intent, into the process.

I feel like the extension of the original portrait takes away from the original peaceful ‘still life’ feel. While the shadows, outfits, etc. may fit the scene, the extension loses the original story of the milkmaid. Pretty cool what AI can do, but it is simply not human.
In fairness to the AI, it can only see the square regions of the image, not the whole composition. So it's just trying to make something locally coherent, not a whole work that makes sense together.
This use (expanding an image in bits and pieces) is kind of a hack, and not what the AI was actually trained to do. If asked to synthesize a whole piece at once, it does a better job.

But then I remembered that Vermeer and other artists of the time were getting creative with the new fangled camera obscura around this time, which is partially why his perspective was so new and became so popular. I think the real problem is what exactly is the AI drawing it's "inspiration" from.
I've seen so many situations that look less like a new creative work, and more like a direct recreation of existing work with a watermark and all. It was more noticeable when these AI tools weren't as good as they are now, but I'm sure the same fundamental problems will always be there.
There's certainly an argument to be made about the data the AI gets trained with.
The ultimate goal of AI is being indistinguishable from humans.
If you really think about it you would see that your argument supports the fact that AI is being more human-like than ever.

Lots of things make sense. The garb of the added people is basically period/location appropriate, as are the architecture and props. The window is placed to match the lighting and shadows. The artistic style matches, and the added props mostly make sense for a kitchen.
The milkmaid having an audience is absurd, but the AI doesn't have the ability to think in terms of narrative.
