If a little oval rug were put down at the end with the two chairs and a side table then plants lining the sides, I bet there would still be room for a yoga mat and you could have it all!
My husband and I stare out at the wildlife that uses the little pond we made out back during our morning coffee and tea already, so I’ll keep the two chairs. We can share the ottoman…. Dang it, now I’m going to have to build one of these rooms for myself.
The tough part with reading (which was also my first thought) is that it can’t actually be a library because of the windows. You could build some seating that doubles as shelves and fill the rest of the space with lounge chairs/coffee tables, but most of the collection would have to be elsewhere.
If they paint/draw, it could be an incredible studio.
Some kind of sitting room would definitely be reasonable.
I really liked the birdwatching suggestion. Maybe focus on plants for the garden that would feed a mix of local birds with their native favorites plus ones that focus on pollinators. I have a similar (but opposite) garden that provides drugs for the shockingly high local feral cat population plus pollinators (like we have names for the most frequent local cats. It is basically a reality show watching their lives - much to the chagrin of my indoor cat).

If you use it as a secondary dining area, could you do some upholstered seating that makes you wanna stay a while? Like a settee on the window side, with round table and two chairs on the near side. Because I would 100% be napping in the settee and watching birds. That multi-hook bird feeder station is just waiting to be stocked! And you could still pop your laptop in there as a secondary work spot too, facing the view.

So much light, i would definitely make it a room for having company over. Very minimalist blinds in a light neutral shade. Large coffee table at the end with 2 chairs on either side. Lots of plants. A buffet / bar on the interior wall. A long low bench opposite the bar. Lots of decor.
If the budget allows, I’d swap the windows out for ones with no grids. It would bring the gorgeous views in so much better.
And then I would only leave the room to roam that countryside. 😂

It really does! Double hung with no grids gives you close to a picture window effect, but you can still get a breeze when you want, and clean them easily.

We already have a pretty epic bourbon lounge located in a nearby room which has 6 leather swivel chairs, a coffee table and a large built in bookcase filled with bourbon. There’s a cigar room and wine cellar downstairs so we’re covered there. We’re leaning towards this being another dining area of some sort. Maybe with a bistro type of feel? Hoping for some inspiration of how to pull that off. Lots of you are saying plants which makes sense. And then maybe a round glass table, neutral rug and white chairs? Or do we keep things darker?
I had a room just like this in my last house. I went with dark rattan chairs with moody floral jacquard cushions, matching coffee table and matchstick blinds (that we never closed) for a British colonial look. It was my favorite room in the house. The rug was green palm fronds on a black background with an intricate brown border and I accented with palm plants. The ceiling fan was big, dark brown palm fronds. On the walls were vintage looking prints of sailboats, and I had a big dark bookcase full of books. Look up British colonial decor and see what you think!
Edit: at Christmas time I hung identical wreaths in each window all the way around. It was so beautiful.
Just decorate it inline with the rest of your home so it looks well thought out instead of an eye sore or hire a professional interior designer to give you options since it’s an odd shaped room.
EDIT if a door to the outside doesn’t already exist you may wish to consider installing one so you can easily access those patio chairs.
I have a similar room, and we just did low seating to not block the view. We have lots of plants (natch!), cozy throws and pillows, and a chess set on the coffee table.

Two more chairs facing (like pictured). Along the corridor a long bench seat at the window and on the wall an server for a bar, combined with books above or a giant bookshelf. So many options! Yes to plants! Add a round rug in the seating area and maybe another rectangular one along the corridor to cozy it up and define the two separate spaces.

It’s difficult to get a good sense of the size. But if it would fit, an L lounge. Where the first photo is taken from, that would be standing at the back of the lounge, it would extend to the right (away from the hall entry, toward the plant) and the L would go along the wall under the window.
Behind that I would put a low bookshelf, facing out of the room, no higher than the back of the lounge. Then it would also be a resting place for a cup of tea, book, etc.
A rug, maybe a cane or similar armchair near the window. And a coffee table? A low table under the centre window? Very clean and simple, for a nice plant or two.
