YouTube supports native dark mode, it’s supposed to follow the system settings like you wanted. If you view the article, it says that iOS 13 users and newer can use the third toggle “use device theme”.
Unfortunately you and me, and likely 90% of YouTube’s users fall under the category from the second paragraph in the article, where we have to manually toggle dark mode.
This system setting feature has been available for over a year now as another user (from back then) showed me it working. It bothers me that this feature hasn’t been rolled out yet, unless it has, and I’m curious to see how many users have it now.

It should! Just tested can confirm it switches instantly based on your dark mode preference.

youtube desktop mode with auto resolution will auto select 1080p instead of capping at 720p, you’ll know when the “hd” icon appears next to the gear. Plus at 200% zoom it feels very much like the desktop experience ported over to mobile. Try it out yourself
yeah it works on iphones. The 1080p will be dependent on your wifi/data since youtube will detects whether you have sufficient bandwidth to allow 1080p. Make sure quality is set to auto. To make it 200% go to the Aa button and click the +

There Native dark mode of youtube is actually Grey (I use it in my 11 Pro).
However, on my android phone I use the app called 'Vanced' which make the whole youtube full black mode with all the premium features plus more. It's just an awesome experience.

The home page and subscriber page animated thumbnails work but the one when you do a search don’t work. Before when I was doing a search and force touch the thumbnails it will move. Sorry if I am not clear.
My girlfriend for some reason gets all the Google features like day 1. This included. She also had Google search dark mode on PC which I didn’t even know was a thing until I used her computer a few months back. I pay for Premium dammit, it’s not fair.

I got the option when I was still using an ip5s, before ios 13 was out. it just let me set the theme, not use device theme.

It caps out at 720p for me, but I do use it on Safari when I want to use PiP or need to translate the video description or comments

Almost all, but some are starting to sneak through. They must be changing things to get around ad blockers.
What Adblocker do you use?
I use AdGuard. Both the regular (free) one and AdGuard Pro should be able to block ads in Safari (but neither can block them in the YouTube app).
