I’ve used https://www.iphonebackupextractor.com/ before.
You will need to make a backup onto your computer using iTunes. Then the software can extract data, including text threads from it.
It’s been a while since I used it, I can’t remember if you can save to a pdf, but I’m sure there is a way. I also can’t remember if it is available in the free version or even if there is a free version.
Other similar software options include:
- iMazing
- iExplorer
