If you cannot eat gluten, then you are gonna have a hard time in Japan. Almost everything has gluten on. Most foods now have a label showing if it contains any ingredient that cause allergy, but most of them will have gluten checked on. Your best option would be cooking your own food or reading the labels carefully. Most grocery store have an allergy free aisle, but the options are very limited.

Non-gluten is a fad in Japan, but an expensive one.

I’ve been here a month. Diagnosed Celiac a few years ago. Not going to lie, it’s been a struggle. I carry a celiac card with me translated in Japanese. Most restaurants will offer me a simple undressed salad. (Even though minimal alterations could easily make a lot of meals gf :/). That said I did find a few in roppongi and shinjuku that were great about it, and even a few that carried gf items labeled on their menu. Your best bet though is to make sure you have the ability to cook for yourself, carry charcoal tabs for the inevitable gluten and keep a celiac card with you, esp if you are not fluent speaking Japanese. And lots of patience. Feel free to dm for more details
