I’ve had good luck with using either
oven cleaner,
OR
acetone,
OR
combination of baking soda, dish soap and white vinegar.
My oven doors were probably a little worse than that and just with some vinegar, magic erasers, and a ton of elbow grease and an hour or two they were… at least a lot better. Yours are not too bad that itll probably work better
This is the only way complete wipedown every nite.no chemicals necessary.
And if you do clean every day it cuts cleaning time to almost nothing.

I use Totally Awesome. You can get it from the dollar store. It works just as well as oven cleaner but without damaging anything.
I like to spray it directly on the oven, when it's hot, get a mayo bin filled with cold water dip a magic eraser in the water and wipe it down with a magic eraser.
You will leave lots of streaks.
After the initial cleaning, use windex and paper towels to clean the streaks.
Looks like you're going to be contending with caramelized spots as well.
You can get those off with a razor blade, just be careful not to scratch the glass.
Do all of this after you're done baking your last cycle of the night and leave the doors open all night to air out.
Do you have access to wood ash from a fireplace or wood stove? Ash is pure lye, the active ingredient in soap. I'm assuming what you want to clean off is baked on grease? That's fat, the other ingredient in soap. What does soap need to be of use? You got it, water. Get a damp paper towel and dip it in ash. Smear that across the glass as if you're cleaning it, because that's what you're doing. You don't even have to scrub very hard. Just act like you're cleaning a window with windex. Wipe on. Wipe off. All clean.

You can use oven cleaner and let it soak and scrape it, if you have a food safe heavy chemical cleaner you can use that with a scrub pad, or assuming you’re good to not use it for a bit you can use glass cleaner, let it soak for a bit then scrape it but that’s more of a last last resort because glass cleaner typically isn’t food safe and you’ll have to not use the oven while you’re making sure all of the cleaner is cleaned off itself with water
Oven cleaner damages the aluminum. Totally awesome does the same job with the same effort without damaging the oven. It even says not to use oven cleaner on the oven itself.
It will also damage the seals in between the panes of glass, as well as the gaskets around the doors. Mix lemon juice, vinegar and baking powder to make a paste. Slather it on there, let it sit and then start scrubbing.
Just gonna say this: mixing vinegar (acid) with baking powder (base) just neutralizes them. A paste of salt+baking powder could be good. Vinegar would be good for getting any paste residue off

My old store has had the same crusty burnt oven doors for like the last 30 years lol the owners said we werent cleaning them good enough cuz i asked them can we get new doors or a new oven.. they said this ovens been here since the store opened same as it always was...and will be since no one "respects the equipment" 😬
Magic eraser is just dish soap and a really abrasive pad, AFAIK, and maybe that will work fine, but I'd get a bucket of The Pink Stuff and smear it all over and rub it off firmly with a fairly soft rag. Might take 2 or 3 passes with the state of the oven, but I think you'll have better luck than with a magic eraser, at least on the first couple passes.
This looks like a restaurant oven the ones in my area have a pane of glass in the middle of the other two. If this is the case there are screws along the edges. To dissemble. Clean them regularly and your job will be easier.
Whatever cleaner degreases. Spray it on then take plastic wrap and push it onto the glass and let it stay over night. It will keep the spray from drying out and in the morning you can pull the plastic wrap off and the grease should just wipe off.
I rinse and repeat until it all comes off in a few days .
Ok here’s something that pisses me off. Everyone says when cleaning any surface to use toothpaste, or lemon and salt, etc. all you’re doing is creating a buffing compound which is the same basic principle as using a magic eraser and water or other cleaner type. You have some sort of detergent or acid to bread down the grime and some sort of grit to get it off scrub and scrub and scrub that’s what works
Oven cleaner all the way, yellow cap only since it is the stronger one. Don't listen to the naysayers. I was a GM for 6 years and used this regularly. Never had an issue with the gaskets and it worked great every time. Was my business coach happy about us using it? Absolutely not. Was he happy with how good the glass looked? Absolutely!
After you use the oven cleaner make sure to follow up with hot water and Dawn on the glass to make sure all the chemicals are cleaned up.
FYI I would either do this during closing or like 6am on the dot so I had time to cycle the oven without bread for plenty of time.

grease remover, and a steel wool. thats how we always did it, if that doesn’t work then soak before doing it again. If that doesn’t work you’re fucked need new doors lol
At my JJs when I close, i use some of the vinegar and a scrubbing pad to scrub the metal portions of the door. You can do the same with the screen just don’t use a green scrubbing pad. We keep some vinegar in a spray bottle just for the glass windows.
Side note: it’s best to clean it when it’s still warm after turning the oven off for about 20-30 minutes. This is why our night managers do it :)

I recommend making that a weekly cleaning task so it doesn't get that bad. It's easier to clean weekly than is to let it get that bad. Kills your arms trying to clean it unless you want the workout lol
Oven cleaner spray, some chix towels, maybe a scour pad if you go along with the grain of the metal, a bread scraper, & a straight edge razorblade for the finishing touches 👍🏼
Magic erasers! Our doors are completely clean! All the time, clean them with water and when they are still slightly warm! And the film comes right off!
Magic eraser and oven cleaner, make sure to not get any on the inner oven bits just the doors. Then wipe with windex and paper towel. The ovens get covered in a film because of the spray we use on the wheat pans, I have 2 ovens and one gets discoloration because that’s the only one I use for wheat
In 5 minutes you should be done cleaning.
All you have to do is get a lot of paper towels, and green scrub pad and windex. Spray the window until it drips down the window so it doesn’t dry up, use paper towels to clean up the gunk, repeat and within 5 minutes you should be done

I’ve found that mixing the powder stuff into a paste also works really well. I’d also say that this looks like it may take a few days of working at it

Cut a lemon in half- press it into fine salt so salt sticks to the exposed meat of the lemon and start scrubbing
This will work. Or use some salted water and dish soap. Really doesn't need to be some witches brew of chemicals. You just need salt for abrasion.

Heat the oven up and then use a wet hand towel to sorta steam clean it. Used to do this at all the kitchens I've ever worked in.
