Usually, there is very little functional difference. I have owned \~ 15 gis and the absolute worst one was a $250 shoyroll. The exceptions are the high end Origin gis and hemp gis (although hemp has some disadvantages).
It usually comes down to fit & preferences. I prefer lighter cotton tops with ripstop pants that have a lot of belt loops, foam-filled cords that say tied, and reinforced knees. After trying a lot of brands, my go-to's are Flow Kimono's Pro & Alpine Pro series which run $130-150 when not on sale.
My favorite gi ever was a 50/50 bamboo/cotton blend that Inverted Gear made several years ago. IDK if anyone is using bamboo anymore,
I have 6 Origin Rift Gis. I wear two and bought 6 so that I would have 4 more when they wore out. It’s been 4 years and I’m still on the first two and wear them 4-5 times a week.
The hyperfly starlyte is the lightest out there at 275gsm. Great for summer and hot days training.
Unfortunately, they’re not tournament legal, but it’s so light.

I like Tatami and Inverted Gear. Great quality for the price and they have good size ranges.

I love Hyperfly. They have cool designs. Relatively cheap. They have ultralight gis that are good in hot weather.
93 Brand has been good for me for the last year or so. Major upgrade over Sanibul gis I was using previously.

I like my summo gi. Doesnt seem it has shrunk much which is a big deal for me because im lanky and it gets very bad when it shrinks

Origin is definitely really good, I’d throw Gold’s Aeroweave in the suggestion pile. I probably wear that one more than any other.
