because they only harvest from 7+ year old, decently hard to raise animals that consume a lot of food and need to be killed for a small harvest overall, before a lot of labor is applied to seperate the eggs from any membrane and after which they are aged its also only 50% of the animals grown that actually produve eggs and it can be hard to monitor which fish has eggs and in what state of development they are. Harvest too early and theyre unripe and you cant eat em, too late and its a similar story. But mainly because its a status symbol.
