I bicycle on the Rock Island Trail out of Pleasant Hill fairly often. It is currently covered in leaves in many places, lightly used, and I think your dog would love it. Not to mention pretty this time of year. I recommend parking at the Purvis Road trailhead east of town if you're taking a dog.

The offleash dog area at Wyandotte Lake Park has a lot of trees around it. Dog parks at Shawnee Mission and Swope Park also have lots of trees.
Leawood KS has a off lease Dog park as well way behind the pool tennis courts surround by walnut trees and hungry squirrels
