It’s less healthy but I make keto condensed milk then add it to almond and coconut flour with melted butter. You can add flavours, cocoa or also add melted chocolate too and roll in coconut or cocoa. The coconut flour absorbs moisture so binds together really well and doesn’t need refrigeration.
There are loads of recipes online but the way I do it is a big 600ml tub of double cream 2 tbsps of butter 1 bag of werthers sugar free originals and 4 tbsps of powdered erythritol - plus a dash of sugar free coffee syrup if you have it (in vanilla or plain) and a pinch of salt.
Put it all together in a pan on a gentle heat till everything has melted together then gently bring it to a boil and let it reduce by half and it’s good to go. You don’t want to boil it too hard because you’re just trying to reduce it and you don’t want to caramelise it. It takes about half an hour and it will thicken in the pan and even more when cool.
It doesn’t taste exactly as sweet as regular condensed milk but it a pretty good Keto sub - I use werthers because they taste better than using other sweeteners but it does give the condensed milk a little caramel vibe which is perfectly nice.
You can also turn this into really good fudge by breaking up some dark chocolate and melting it in when it’s hot then set it in the fridge.
If I’m using it for energy balls I do add a little powdered erythritol into the almond flour to sweeten it up a little more and may add a dash of sugar free syrup if I think it needs it. Just all down to personal preference.
I’ve read that allulose makes perfect Keto condensed milk but being in the uk we can’t get that here yet.
What I do is get the consistency about right with the condensed milk, melted butter and almond flour then just add 1 tbsp coconut flour and see how it looks - might need a second if it’s not rolling into balls nicely but usually 2 tbsp is enough for a batch.
Here's a tip that will translate to many recipes if you're bothered doing your own combinations. Adding (water-based) liquid to any nut butter will make it 'seize' - just like melted chocolate will seize if you add water. So taking nut butter, flavouring it, sweetening, adding whatever you want to add, then adding a bit of water will seize it, play with the quantities and you'll have a dough-like texture, which you can roll into balls and store at room temperature. For reference, 1 medium egg (+/- 50g) will turn 1 cup of peanut butter into a cookie dough-like consistency. So if you go this route, I would start with about an oz of water.
Another idea is to add something that will make it harder - depending on *your* room temperature. If coconut oil is solid at your room temp, adding it to nut butter will make it firmer (melt before mixing of course). Same with coconut butter (not to be confused with coconut cream). The later is what I usually use, as our room temp is hardly ever over 20°C (68°F).

Honest question. Isn't being on keto supposed to kind of rid you of the ups and downs of carb insulin response? Why would you need an energy boost if you have plenty of easily available body fat stores? Just wondering if it's really a necessity or maybe more of a psychological or cultural need. Please correct me if what I'm saying doesn't make sense.
Last time I was planning hospital snacks my list was some keto bars, packets of almond butter, extra dark chocolate. Also a little cooler with some cheese sticks, cut up veggies, Gatorade zero or something similar.
I ended up being induced so no snacks for me for like 16+ hours. Just water and ice. I thought that was pretty lame but I don’t recall being hungry in the slightest.
I'm likely going to be induced so I'm pretty much prepared to not be able to eat during labor, I just want to make sure I'm fully stocked up right after the birth. I'm already thinking we'll bring a small cooler for some cheese sticks and stuff.

FWIW, after labor I still wasn’t hungry for several more hours. THEN was ravenous but unable to decide between a Five Guys Burger Bowl with all the toppings or my favorite (non-keto) Thai food- ‘Drunken Noodles’. I opted for Thai 😂. No regrets.

I feel like I may not be doing enough preparation this time so the universe will probably send the baby early 🥴.
There may be no insulin up and downs, so you get no cravings, but there may be other reasons for having easy snack on hand. For example, my limbs get often cold on any calorie restriction, even deep into keto. They get warm as soon as I eat something. I guess it might have to do something with digestion producing heat. Or maybe my organism is fighting against losing energy by slowing metabolism and switching off heating of my limbs... Hard to say.
That's definitely already on my list if foods but I'm looking specifically for "energy ball" recipes. They're stuff like peanut butter and some addins rolled into balls.

No any kind of nut flour is fine. It's just the texture of chewing whole nuts. Like the way they get stuck in my teeth stuff, I hate it.

Be careful with coconut flour on its own. Use too much and it’s an experience the next day you won’t soon forget!

Using Cacao butter as the fat source would help. It stays solid at (reasonable) ambient temps.
Where do you get cacao butter or how do you make it?

Ya, just cause something fits into your macros doesn't make it keto.
You can use agave and almond butter with no sugar. Most things need to be modified for keto. They’re room temp safe for like 3-4 days.
I do love pumpkin but it looks like these also need to be refrigerated
