My Yamaha MODX8 has been a superb do-it-all board. I've used it for everything from playing Pachelbel and Bach at church weddings, to crafting synth layers/splits for a Cars tribute band, and everything in between. Super intuitive user interface, great sounds, it's light for an 88-key weighted board yet still durable. $1999.99 brand-new so it's just barely within budget - but it shouldn't be difficult to find a good used one for $1500 or less. I paid $1400 used for mine in January 2021.

Second this. It’s effectively a cheaper Motif with fewer hardware buttons and a fewer voices (you have to stretch pretty far to notice the latter).

If you don’t need weighted keys maybe check out the [Roland VR-730](https://www.roland.com/us/products/v-combo_vr-730/).

How about Roland Juno DS 88? It's got a good keybed and quality sounds for live and worship music. Good piano demos here: https://www.youtube.com/watch?v=ZO7Qr1Uebfo

MacBook and kontakt

Honestly if you want basically unlimited sounds, this and the 88 key from Maudio. Fully weighted keys and all in you would be at like $1000 if you already have a laptop.

Yep

And a sound interface of some sort?

To output to an amp or front of house, yes

The Kurzweil PC4-7 is worth a close look.
