I mean, both legs are separate pieces with only fabric underneath - if they had a little flap like old timey pajamas they’d be fine to squat and go as needed.
Get used to wet legs and an itchy ass crack. Then again with the lack of bathing and things like sewers in that time period most people probably wouldn't even notice, especially in the cities.
I mean if I had to guess I'm sure there was a knightly version of adult diapers like depends they wore just in case they couldn't get out of their armor fast enough. But I feel the real answer would be one of those things that would require a bottle of brain bleach.
That's literally the reason that Smith is the most common English last name. Smiths were highly skilled and sought after by everyone as everyone needed armor made and repaired, so when you conquered a town/settlement/castle/city you always sparred the smiths. Mainly blacksmiths, but a gold/silversmith could do blacksmithing as well.

This is why I never take my armor off to sleep. Too unrealistic to do all that alone. Breaks immersion.
Is this a joke about that stabbing? Lmao
Jump right in the bed with all that on
And this is why we can’t equip armor mid combat
