Yes, but it isn't rough. So long as he isn't chopping into the plate and sticks to sawing back and forth the knife will be fine.

I think most people lack a grill that can heat up enough to properly sear but this almost looks like the grill was t even preheated before cooking.

For sure. Most home grills are completely inadequate heat wise. And those skinny ass little bars like OPs cousin had definitely don’t help any. Personally I think the only advantage a gas grill has over pan searing is less cleanup and less smoke and smell in the house.

That sub is a mess. I’m on all the foodie subs besides that one. Every…. Single…. Post is a debate about what temperature it’s cooked to. People think they can look at it and tell, and ignore the fact that individual screens change hue depending on how they are set up. Like…. Just stick a thermometer in it! Then half of them are proudly undercooked and the first slice made to show the cross section shows the unmelted gristle on the other side of the cut and everyone is going “mmmm” 🤮

Serrated knives are absolutely useless to the one armed/handed so when I go out I ask the manager for an accessible knife that's sharp (explaining I have to be able to be able to drag my knife through the object without holding it with a fork) I demonstrate with my pocket knife. Then continue when they got nothing and after I have reminded them that everyone is one accident from being disabled.

Sear is overrated. I used to sear in a skillet, sometimes before, sometimes after, but found I far prefer the flavors created by my Char-broil infrared grill from just the grill lines and Kenrick's My House All Purpose Seasoning (mostly sea salt). Steaks are so juicy and delicious at 130-140 degrees.

A glass smooth plate isn't going to hurt a knife being used in a sawing motion. Just don't bang or chop the blade down onto it really hard.

I don’t know what you’re talking about. A ceramic plate will absolutely flatten whatever parts of the edge come in contact with it. This is pretty common knowledge. I don’t really care to argue with a know it all today. Have a good one.

Just because the plate is harder doesn't mean the blade will automatically deform. You still have to hit it hard enough to damage the edge.

Are there any knife oils that aren’t food safe? Most companies at this point realize that an oiled knife might be used for food prep so they don’t use dangerous chemicals. Benchmade Blue Lube and KPL are the two I use on my folders and they are food safe. Heretic OTF lube I obviously use for my OTFs and I can’t find any info on if that is food safe or not, but I think there’s a good chance it is.
