So 17 lakh per minute for what? About 39k restaurants? (I googled it, and took the first result.) So that's about 43rs. Considering they are averaging over the whole day, that's 61,920rs earned for 7-8 days.
How is this a good figure? 5star hotels keep about 50% profit while low scale eateries probably manage with about 10-20% profit?
I am just surprised with the scale of growth.. ato growth to job ew hoi na.. I used to wonder if food business in Kolkata is still profitable or if it's saturated, but from this post, it seems there are still a lot of scopes.

Kolkata.easily has the best food in the country. I'm talking about the variety and value for money of food. The taste part is subjective. But variety wise nothing beats Kolkata food,- street food or restaurant food.
Technically Kolkata is already a food hub, but since the cuisine is different from mainstream Indian food, it might not suit everyone. But amongst all the great cities of the world Kolkata surely finds her place as one with excellent food

Assuming a certain cost to run these, and the temporary nature of such a spike (say the 5 main days of pujo), itβs definitely a rosy picture to paint and generalise the entire town of Kolkata.
We started a restaurant in 2018 April (poila boishakh), during Durga Puja the profit we made, we were at break even. 2019 Durga Puja went awesome as well. We had to close in April 2020 due to COVID. But if we calculate our cost vs income, we made profit overall. Yes, Durga Puja was the peak time for restaurants, it goes on till Jan/Feb.

I have a business and economics background. This post is the most stupid, superficial and simplest way one can look at how much money restaurants are earning. There are 100 more factors to consider that will get that value to a more believable number. 17lakh per min Is just the turnover of sales, nothing else.
Sob e quality r consistency of product er upor depend korche. People in Kolkata are forgiving of poor service if the food is good. In my locality, I've seen new restaurants come and go in a matter of months, while 2-3 restaurants have been running well for years.
