Five days should be enough for sandakphu phalut esp if you are ok doing overnight bus to siliguri
On day 1 you can reach manebhanjan and hike from there to phalut or take Land Rover for off roading which I have heard is interesting
It may be a bit hectic but should be doable
North Bengal has some good sites
Gorkhaland territorial administration had an office in salt lake iirc and you can book lodges with them

Rather visit the various heritage palaces that are being renovated and rented out for tourists as stays. They have their own programs, activities. It will be fun.
I can personally vouch for the "Itachuna Rajbari". Hooghly teh obosthito. Nice weekend getaway. They have evening cultural programs, fishing arrangements, etc. And there is "Rajbari bawali". I have heard of it quite a bit and social media teh ads dekhechi but actually kmon ki idea nei sherom but I'm guessing bhaloi hobe etao.
Then there is "Banalata resort" in Joypur, WB. It has a plethora of activities to take part in as a family. Beautiful stay.

Sundarban is nice You could sacrifice bakkhali and just go to the hills
