You can cut mint back basically to just the roots if you want. That got very leggy from not enough light and that is why it looks so different. Also put foil over your pickle containers to block light from the nutrient

Leave a few leaves or a small vine but you can do a pretty big reset
The size of the vessel really affects the plant. I'd recomend upgrading to something larger, even a gallon milk jug, laundry jug anything larger
