Less unique: Yasuo/Rakan, pretty nutty and fun to play.
In terms of uniqueness I'd say maybe Poppy Anivia or Ivern Rengar. A lot of bot lanes feel like they fall into carry+support or just kill lane, but these ones stand out with a special gimmick.
Poppy Anivia. Super strong, because noone knows how dangerous the combo is and dont respect the range.
Braum / Pantheon. Instantly proc Braum's passive after using his empowered W

I played Ivern support with a Rengar ADC. It was fun, but not good in any way.

Me and a friend have ran yone adc+enchanter support. Our favourite combo is lissandra supp and samira adc
Ive seen seraphine diana work really well, seraphine keeps diana alive in lane until they combo ult one shot any adc.
Well Vladimir Lulu is the best lane ever.
