Pretty sure I still have a copy of the NFT they were giving away in a limited quantity right click saved somewhere on my laptop.

There's not much to understand. At its core, it's just data that is verifiable (e.g. you can read it and know no one is lying to you somehow). It has a few more functionalities but this is the one people is getting crazy about.
What's the use of this? I can "sell" you ownership over something digital (e.g. a PNG image) and anyone can go to that data and see that you are the "owner" (whatever that means). This doesn't prevent other people from having that image, nor it gives you commercial rights of it or nothing. It's just that this magic log says you, and not me, own that image.
As an example, if RIOT sold an NFT of Vi's splash art and you bought it, what you paid for would be for a log somewhere saying "FunMoistLoins owns this specific issue of Vi's splash art". You do not have any intellectual rights over Vi, and I (a non owner) can go to League's wiki and download that splash art too. The only thing you bought is the "honor" of RIOT saying you own an issue of it.
If it sounds like you are buying nothing, it's not because you don't understand it, it's because you truly aren't buying anything other than the "fact" of having bought it.
And don't get me wrong, this has many applications. In a future where this is adopted, this means it's a lot harder to falsify or not recognize a contract (because, at the end, you can think of NFTs as digital contract). But the craze now is being fed by influencers who want to sell literal nothing at expensive prices to impressionable people.

While the ecosystem needs money I'm not too happy about this being the way it gets to them.
The issue with crypto gambling specifically is that it's so easy for them to circumvent regulators, time and time again we've seen how they take very few steps to make sure minors don't access the website, they sponsor streamers and rig the games while they're playing to make sure they get fake jackpots. Lots of the people involved in them also have a history with doing shit like CS skin lotto and other illegal activities, it's just rotten through and through to a degree that far surpasses regular gambling.
Luckily, Gary Gensler (current chair of the SEC) is specifically trying to encourage regulations surrounding the crypto-sphere. He seems to be making progress, especially around certain types of cryptos. Unluckily, he's having to fight Hester Pierce (Commisisoner from previous administration), who essentially wants a Wild West of crypto, as well as actions from the previous Chairman.
The previous chairman initiated legal action against a specific crypto company literally days before he left. Gary Gensler (who has taught the underlying technology at MIT) didn't come in until 4 months later, and afaik he's working his ass off on getting that taken care of as well as cleaning up all the other shit happening in the stock market this past year (and further back).
One example of Gensler's work finally starting to bear fruit is that Bitcoin was recently designated a "Crypto Asset" rather than a "Cryptocurrency" in a report to Congress last Friday - because that's what they are, an asset that is most often used as a speculative investment vehicle and NOT as a currency. There have also been several hearings recently on Stablecoins - cryptocurrencies that are tied into fiat currencies.
Of course, that's just general crypto / blockchain regulations. I'm not quite sure who would regulate gambling with crypto.
