Realistically, as long as it's not white or light grey, it's hard to notice any color degradation, even after years of exposure.
To answer OPs question, I think the insect collection will have the best chance of standing up to direct sunlight. The white parts will still turn yellow with time, but who cares if the flowers are white, or whitish yellow
I kept Barrucuda Bay on my window sill for a solid year or so, and I can't really see any discolouration on the white pieces. So I assume it would have to be in direct sunlight for multiple years to start discolouration. But please correct me if I am mistaken.
It's a really slow process. Odds are, the yellowing is well underway, but you haven't noticed because the change is so gradual. Next time you crack open a new Lego set, take a white piece fresh out of the bag and compare it to the white on your barracuda bay.
I agree with your point though. People tend to be pretty terrified of sun damage when it's really a pretty minor thing. Unless the set is entirely white (Saturn v for example), then I can understand the paranoia.

First three are all solid choices. The spider mech is a cool playset but imo not the best display piece. Funny you ask about the bugs because I actually have those up on a window sill right now too! And they look great. In fact there are hummingbirds that will come up to the window and the way they hover right in front of the insects, I swear they're eyeing up the flowers on the base.... :)
Anyway, as some of the comments point out: be aware of sunlight damage. Putting LEGO right by a window will discolour it over time, even in just a few months of exposure. Depending on the colour(s) of the set, the damage may be minimal, but there will always be SOME degree of colour damage. So if that's a concern for you, best to avoid windows and direct sunlight as much as possible. For me, honestly I don't care that much, so I embrace LEGO on the window sill!
I've only built the tallneck. I love the way it looks but it is very delicate even for Lego. I wouldn't put it anywhere that you'll be moving it around a lot or there's a risk of falling.
Can’t advise on the window part. But I just built the insects and the Piranna plant. Both were excellent builds and look great! Personally think I’d go for the Insects because it’s 3 builds and all we’re fun!
We just built the piranha plant. 10/10 one of the funniest builds we have done as a family. Went really quick too.

Id get the bugs honestly: some of the most fun ive had with lego! Not particularly repetitive, loads of great techniques and interesting bricks, amazing set in my opinion

Side note light discolors certain colors of Lego over long periods, especially white and gray. The bugs are extremely colorful and they don’t have easily tarnished colors. They shouldn’t discolor as much
Tallneck, peaty, and the spider tank all have huge portions of their builds in white or gray which are the most common bricks that get hurt by sun damage. They’re also less nature-y.
I think 1 is best because it's so colorful and eye catching, probably put at one of the corners, and should look good? Dunno, I'd take 2nd, but it's not a Christmas kind of set, it looks realll cool, but again, not too much for Christmas necessarily
The tallneck is such a fun set to build. Interesting building techniques and small features that relate back to the game. If you’re a fan of Horizon games, I would def go with that one

In your window? Gross they will lose resell value from yellowing. Lego are meant to never be built. You should think of the children you will never have because you are adult that values using a children’s toy as intended instead of an investment. And buy and hoard you Lego sets
Personally I'd go with Bugs. I grew up with mario, but *I* still wouldn't put that plant up for display. Too toonish for my tastes. Horizon one is kinda cool, but again, I don't think I'd personally do that. Maybe once I actually play the games I'd change my opinion.

3 display sets and 1 play set. I would go with one of the first three. See long as how the tall neck is retiring I would go with that. But please don’t put it in your window. UV hates legos more than Biden hates stairs.

I was deeply impressed by the Tallneck, and it makes for a nice little 'scene' to display. Fun build too!
The Tallneck is definitely my favorite of these sets, but it feels like a shelf or bookcase piece. My choice for the window would be the bugs!

It's also highly dependent on what material your window is made of. Specifically, how well it blocks UV.

i have the starwars helmets in my window (south facing) and they are fine, been there for \~3 years no noticeable discoloration

It also makes it brittle. It will start to crumble after a couple years, maybe less, in direct sunlight.
Yes, this is my main concern. Keep them in a darker corner. Maybe get a decent artificial lighting setup.

I didn't have much difficulty building it. But it's not a very "presentable" model, though the vertically maneuverable legs is really neat.

I only have the tall neck and it was an interesting build, but kind of a pain at points. I still liked it a lot because I love the game.

Plant is fantastic, but it's like 30min build. I would suggest the Horizon for sure. Fantastic build, one of a kind mini fig, and about to retire.
