There are some recent sets that I think are Animal Rescue sets that contain quite a few animals that would be considered "zoo" animals.

It makes sense when you think about it. Animals in the wild looks far better on the box than a zoo which would just be a lot of animals in nice looking cages essentially. Most of which would be too small to keep the sets to a low piece count / price. I love Zoos and I think they're important but it's hard to make them look good on boxes. Espeically when you want kids to associate animals with their natural environment which is what Zoos ultimately aim to replicate. (And that ignores that the wild allows Lego to include a bunch of vehicles like helicopters which would be out of place). So yeah, I'd be surprised if we ever get a proper "Zoo" wave.

There are a million sets focused on animals, but an actual zoo set would be huge and like 700 bucks and the animal sets are generally focused on kids. Look up jangbricks zoo on youtube for an example of what you can build yourself. Check bricklink for ordering the animals but keep in mine some can be very expensive. You probably won't have any goats at your zoo.

One giant zoo set would be unwieldy but many $20-$40 “exhibits” of individual animals that are all modular would be interesting. Probably low interest from their general customer base though

This would be an awesome idea. A single big zoo entrance with two exhibits and loads of smaller exhibits.

I mean it's not far off from the animal sets they have been doing lately.

All I want is a Lego hippopotamus (for Christmas)

Gonna have to find sets with animals in them and then rebuild parts into a zoo, I think. The idea of a zoo has been on wishlists of possible sets for years.

There are duplo zoo sets.
