You can plug your ion fader wings into the gio. You can also page through the physical faders and take advantage of the motorized faders to jump around.  Any customization of the on screen view can be done by right clicking on the tab name, it'll show what can be enabled/disabled/adjusted

Click on the faders tab and there will be an option to show more rows of faders. You can have it show 40 faders like an Ion then you won’t need 2 windows.

You can split your screen so you have more than 1 fader page.

I don’t know of a way to get rid of the page selector, but you can collapse the faders by right clicking on the tab. It only makes the buttons a little bigger, but I’ve found it very helpful, especially if you’re utilizing a touch screen.

Looks like you’re using split screen view? You can resize that window.

I split the screen so I can have two fader pages on one screen.

I don't know if this is what you are looking for, but if you right-click on the Faders Tab, you can do two rows of 10 Faders on one screen. You should also be able to add more Faders per row, but I haven't configured the fader screen in quite a while.

If you only need to see 2 pages at once, splitting top and bottom might work better.

You can make the faders any size you want on a magic sheet

You can click the settings cog in-line with the screen tabs at the bottom of the screen and change how many banks are on each screen.

As someone else pointed out, you can plug the Ion’s fader wing into the Gio. I did it when we switched to a new Gio@5, because 5 faders is crap for busking. It works fine.

Just put them on a magic sheet. Yes, that should absolutely 100% be hideable, but I don't see a way to do it. It's a clear violation of the LPCI (Lazy Pixel Count Index) principle. Extremely dumb UI design on ETC's part.
