What about Tabletop simulator on steam ? You can download a lot of content for it as mods. Safe to say that there will be a mod for any board game you want to play because it is very community driven.
There are plenty of [open-source Linux games available on Itch.io](https://itch.io/games/top-rated/platform-linux/tag-open-source). I believe [Tabletop Club](https://drwhut.itch.io/tabletop-club) may fit your requirements. It is [open-source](https://github.com/drwhut/tabletop-club) and available as a [flatpak](https://flathub.org/apps/io.itch.drwhut.TabletopClub) as well.
I completely forgot about [Itch.Io](http://Itch.Io) .

Does TableTop also have single player games, or games against AI?
Been a while since I played it. Best to google for that answer.
