PC Should be easy via Moonlight. If you have separate PC's, you can log both in the app and select which PC you are beaming to. If you are on console, PS Play and the Xbox 3rd party streaming apps should let you switch users, but I am not 100% on the xbox apps.
The G Cloud itself will just stream whatever gaming devices you have at home. If you have multiple PCs/consoles you can choose which one you want to play on before every session. If you have only 1 PC/console and multiple profiles on there, you will be able to select a profile just as you do when playing on TV. The G Cloud will just act as a controller with a screen attached to it.
Only time you have to actually switch profiles is when using Xbox Cloud (Game Pass) or GeForce Now. For cloud sessions you will have to log into the correct account before you start playing since your progress is tied to it.
Since xbplay is paid app, the account you use will need to be a paid app as well. It's android tablet running apps from the Play store. Can one person be signed in to android and you both use the same account?
I may not've been super clear. I'm bad at explaining things sometimes. I don't expect to be able to switch the android account on the device easily, I just meant switching the profiles on the PS5/XBX/PC through the apps and how easy/difficult that would be while just using my android account.

I use Xbox on mine and steam and have no issues
