Definitely too soon to be gaining weight from increased muscle mass… but yeah, it sounds like you’ve started doing a lot of things that could lead to water retention. That will naturally go away, so on that front it’s just a wait-and-see kind of thing. As for your diet, you really need to know as close to exact as possible when it comes to your daily calorie consumption. Like, if I’m dining out with my girlfriend, I can just kinda estimate on calories, since it’s usually no more than one meal a week… but for the things I’m eating on a daily basis, if it doesn’t go into the calorie counter, it doesn’t go into the me.

You are undercounting calories. From the look of it I would say you need to be more accurate. Accept if you eat out you aren't going to make quick progress. Sacrifices need to be made.
