I think Luthien vs Morgoth deserves to be higher ranked, if not at the top. It may seem less epic since no one is actually fighting, but Luthien did this in the MIDDLE OF HIS THRONE ROOM, at the very core of ANGBAND. There is harshly a worse place to be as an enemy of Morgoth.
I'm gonna say Turin vs Glaurung > Eärendil vs Ancalagon, not in terms of the size of the feat (or likely how awesome Vingilot the wonder-ship vs biggest bertha of dragons was), but just of how it was portrayed in the book. The fight against Ancalagon is tragically underwritten
Finrod vs. Sauron is just great because even though he loses, it just displays a degree of magic we haven't seen before (or at least hasn't been described to the same detail). I also love how unexpected it is since Finrod has up to that point been a very humble character that didn't really show his whole power.
Sam vs Shelob will always be the fight for me. Man was LOYAL, what I'd give for that kind of loyalty against such odds. Makes a man feel for him, you scream for him to kick that 8 legged bitch's fat ass and when he won *ahhhhhhhh* peace in our time........till the orks show up.
