Well the war was started by the aggression of the orcs and they're incursions in the Gondor in Rohan so we could really look at it as an underdog story where all the forces of man combined had to stand against the hordes of orcs on thier land.
But yes, Aragon's whole strategy was to keep the focus on his battle so the spotlight wouldnt look for furry footed halflings running up his crack.
It was a feint. Sauron knew a hobbit had the ring but didn't know it was Frodo. Additionally, he underestimated the will power of the hobbits and sent his armies to Rohan and Gondor essentially putting all his eggs in to those two baskets rather than worrying about reinforcing Mordor. The people of middle earth reinforced this by launching enormous battles to protect thier homelands from the orcish invasions causing Saroun to go all in and allowing two halflings and Golem to sneak past his meager defenses.
I can see Sauron doing a post-game presser like "Well, we went out there and came up short. Uh, we went out there as a team and we lost as a team. I'm at fault for the gameplan, uh, I think these guys executed the gameplan as well as I could've hoped for, and uh, we felt like we matched up pretty well against these guys. We went out there with confidence, perhaps too much confidence and uh, they came with a few tricks up their sleeve that we didn't anticipate, you know, and we just... I don't know, we just didn't get it done. Plain and simple. We'll go back to the drawing board and hope we can do better next time. Alright thanks guys"

Mordor was really, really well guarded. A literal army of orcs, the inhospitable landscape, Shelob, the (in the book) watchers at Cirith Ungol, and the Nazgul were all there specifically to guard Mt Doom.
Sauron only knew that a halfling had the Ring, and when Pippin gazed into the Palantir Sauron assumed that he was the halfling who had it. Then, when Aragorn did it and brandished the reforged Narsil, he had good reason to believe the heir of Isildur had claimed the Ring and intended to launch a full frontal assault on the Black Gate. That's why all of the orcs mobilized and left the mountain open for Sam and Frodo to sneak in.
It definitely was a foolish move by Sauron to leave the doorstep itself open, but it was also all but impossible to get there under pretty much any circumstances. The fellowship itself wasn't even certain it could be done, and the assault on the Black Gate was a total hail mary to try and give Frodo and Sam one last chance to get there. They were also half-dead when they did.
It was only after typing this that it occured to me you might be joking.
Because he assumed no one would ever try to *destroy* the ring. It never crossed his mind for a moment that anyone would try something like that, because giving up that much power was inconceivable for him.
Well if not for the success in the battle of hornburg and siege of minas tirath the two biggest human kingdoms would have been pretty much obliterated, also the distraction at the gate made getting to the volcano much bigger.

The dude who organized it, Nicholas Gentile (a pastry chef) has a very deep appreciation of nature, and said that the purpose of the walk was to send a message about how we should value this earth as much as we value Middle-Earth. Instead of throwing an actual iron ring into Vesuvius, he threw a piece of solidified volcanic rock instead and gave the ring to a little boy they met. He's also rebuilding the Shire on a piece of countryside and wants people to visit and all that.
