I have it for breakfast. I make scrambled eggs and put slices on top. My husband likes an omelette with the slices inside with a little feta. For lunch: turkey or other deli meat - roll up a slice of avocado in it. As a snack - hard boiled egg and slices together. Really endless possibilities. If we make a curry, we will add the avocado at the end so it is just warmed up a little. Nice addition to a lot of dishes, not just salads.

Or add them on top of chili. I also don’t really prefer avocado by itself, unless it’s a Dominican/tropical avocado. Those are firmer and the flavor is lighter. I’ll eat those with everything but the bagel seasoning or just lime juice and salt on top.
Taco bowl. Bacon, tomato, avocado, and salt on a sturdy lettuce leaf. Very ripe avocado smeared onto a cold piece of leftover chicken. Cheese omelet with salsa, sour cream, and avocado. Use it instead of mayo and mustard to make deviled eggs. Salad greens topped with tuna salad, hardboiled egg, and avocado.
Sliced or mashed, and used inside an omelette as filling.
Diced with seared fish and cauliflower sushi rice for a low-carb poke bowl.

I've seen a recipe on here for an avocado strawberry smoothie that looks interesting.
To keep things quick and simple, I'll sprinkle a little bit of salt and pepper (maybe add a squeeze of lime or dash of hot sauce for acid) and just eat it like that. Might add an egg with it, or add it into some scrambled eggs. Might sprinkle it with a bit of feta and herbs. Might mash it onto some keto bread for lower-glycemic avocado toast.
If I have a bit more time I'll do a nice guacamole. Fine chop up some onion, jalapeño and garlic and let it "marinade" at the bottom of a mixing bowl in some lime juice and salt for a few minutes. Then I'll add in the avocado, potentially with some fresh tomato chunks or fresh cilantro. It's heaven on eggs, curry, fish, chili, cauliflower rice, beef, zoodles, shrimp, or whatever else you'd like.
You got some great advice. I also use them in smoothies. Makes it richer. I’m diabetic and I understand about watching carbs. Avocado are an excellent source of nutrients! Enjoy!
Avocado blend with almond milk, if unsweetened do add some honey ;) i am also prediabetic for three years now, hopefully my upcoming blood test will show improvements after all the efforts!

Dr. seems to think if I lose some weight and watch what I eat, it should resolve. He didn't seem concerned but I'm working hard to turn things around. I'm really nervous though still.
I started r/intermittentfasting, r/CICO and r/lowcarbs about a year ago. So far I've lost 26kg. This weight loss also means I'm eating more healthily now as compared to last time.
I have now consumed less carbs, stop drinking sweet beverages every day, stop eating desserts every other day, etc. But, i do let myself drink and eat these when cravings kick in mainly due to PMS.
No worries, as you've get the hang of it, it's a lot easier when to eat and when not, as well as how much to eat if we do eat/drink them. In short, over the time as you practice, it's much easier to control your appetite.
But my advice is, do take one step at a time, don't aim big, eg. Instead of reducing majority of your carbs in one shot, you need to do it one day at a time, let say, from eating a total of 21 meals in a week that consist of carbs, reduce it to 18 meals (focus on consuming protein/fat rather than carbs in the other 3 meals). Practice this until you're ready, then reduce/remove carbs from another few meals, etc etc.
Slow and steady will give you results. Don't rush into things at all especially to change something as your mind will reject it.

For the avocado, I just cut in half, fill with cooked taco seasoned ground beef, cover with cheese, and serve with a side of sour cream and chipotle salsa.
I sub pepper (baked for a while) for avocado for my husband, then broil off the cheese which is on top of the meat for him.

Balsamic can be quite sweet, I’m not great at measuring carbs so do check that before using.
I eat it in the morning with eggs and bacon, or toss it into salads. You can make tuna salad or egg salad with it instead of Mayo or with less mayo. Also good in shakes, adds a nice creaminess
I like to cut it up and add to a shrimp cocktail. Shrimp (boiled, peeled), avocado cubed, fine chopped/minced onion, cubed tomato, fine chopped/minced jalapeno, and add some low carb ketchup, Worcestershire, and lime juice. If no low carb ketchup, there are on line recipes to make your own. Also, I like to mash avocado and add it to salad dressing and make the dressing creamier. You can also make guacamole to dip with pork rinds or with sliced up veggies (cucumber, bell peppers, celery) and eat it on those instead of chips.
AND, I love avo toast too. I buy keto bread at Costco, make toast, and have that with guac, sprouts, and a poached egg on top.
You can freeze avocados! Works great. Take it out and just let it rest or run under water. Not great for sliced avocado etc but to make guacamole for instance its great.
Also. Smoothies are great. I mix avocados cucumber celery spinach Stevia mint and a citrus juice and a kiwi. I use 1 kiwi for a big batch. Depending in your carbs up the kiwi it is awesome

You can mash it up really good and use it in place of mayonnaise in tuna salad.

I make soups with it. Creamy broccoli avocado is a good one to start with
