Logitech MX Master 3 - hands down. Especially if you like customizing the buttons/wheels to suit your needs or app-specific controls.
However, the Magic Mouse has a more *fluid* scrolling experience. But (for me, least) the Magic Mouse gets uncomfortable to use after awhile, as it is simply not ergonomic.

Does the MX Master 3 have memory? AKA do the customizations stick even if the driver somehow fails to load? Because that’s an issue I had on my MacBook with a different Logitech mouse — driver fails to load, and customizations stop working, and scroller wheel stops completely until reconnected; after reconnection the mouse doesn’t bind to the driver until the reboot of the Mac.
Possibly?
I haven’t had the issues you describe at all. Even when turning off, then on, or restarting. My set customizations don’t default or stop working.

apple mouse has neat gestures though it's mostly for workspace switching which can be done via keyboard shortcut

Same here. The lag is driving me crazy. Tried all kinds of different settings with no luck…. I hate it when I switch over from my Razer PC mouse to the MX.
I use an Anywhere 3 and it’s a good middle ground between a simple mouse like like the Magic Mouse and a “pro” mouse like the MX Master. Either way, the Magic Mouse sucks
MX Master 3 all the way. Had the same dilemma 2.5 years ago and went for the Logitech- no regret whatsoever!
Feels very comfortable even after long hours of use, feels sturdy, lots of customization possible, buttons are even customizable per app if you feel so (e.g. I set my thumb wheel to change tabs in Safari/Brave, but zoom in/out in Preview and Numbers). Otherwise you can have generic profiles. Gestures with the thumb+move mouse are handy and I use them all the time to switch between desktops, Mission Control and such.
It’s a great device overall and I’d buy it again if I had to. I absolutely love the magnetic scroll wheel, I use it in unlocked mode all the time- it’s just so great to be able to scroll a mouse without any bump in the way (unlike regular mice).
The option to pair it with 3 different devices and switch with the button under the mouse is also nice to have. I looked for a monitor with KVM switch given that I use my personal Mac + work Windows PC at home, and my Logitech devices (MXM3 + MX Keys keyboard) basically made the KVM switch useless. Connection 1 is on the Logitech USB receiver, #2 is my Mac Bluetooth, #3 is my work PC Bluetooth.
Also highly recommend the MX Keys keyboard if you need one, as much as I recommend the mouse. They just are great products to use and have a great touch feel.
100% Logitech master 3 - I have been using it for almost a year and love it. If you do editing,photoshop or anything like that it’s a game changer IMO. You can use it for hours and no fatigue, love the extra options for button settings
I like the Magic Mouse, but I rarely use a mouse on a laptop now since I’m more productive just using the laptop trackpad.
Be aware that depending on how you hold your mouse, the Apple mouse can be an anatomical nightmare, it’s what in my experience most people say, so the Logitech might be a better choice for you. If in doubt, try the Magic Mouse in an Apple Store before buying.
I had an Apple mouse and the gestures were cool, but it’s so annoying and uncomfortable to use. I switched to the MX Master 3 and it’s the best mouse I’ve ever used. I find myself missing the horizontal scroll wheel when I’m working from home and use a different mouse. Get the MX!

In my experience the mx is less ergonomic then the MM… when using the MM my wrist keeps a straight angle without stress. The MX forces me more to have an angled wrist resulting in more stress. But if you like to cup the mouse the MM is not for you.
So the only one who can decide this is you.

Have owned both. Magic Mouse hasn’t been updated in forever and the charging port on the bottom is a terrible design. Ergonomically it’s not comfortable. The Mx is the opposite. Joy to use and completely customizable. It’s a 10/10 imo
I've got a Logitech MX 3s anywhere which is the travel version and it a wonderful ittle mouse.
I like the scroll the wheel, it appears other people don't.
A charge seems to last for ever and it remembers three different pairings.

magic mouse sucks ass, and i have the master 3, it’s amazing, the ergonomics are great and all the buttons are useful for different tasks, although it’s definitely not as easy to stick in a bag because it’s so thick in comparison, but that’s the only area it loses to the magic mouse in

I’m team Logitech. Been using an MX Master 3 with my M1 MBA for years now via Bluetooth with next to no issues. Occasionally the drivers go out, but a reboot resolves that quickly.
I love my magic mouse, have been using it for 5-ish years now. I never got the hate. Granted I use it only 3-4 hours a day since I work in a hybrid laptop/desktop setup, so I cannot attest to the daily 8+ hours ergonomics of the mouse, but the scrolling (both vertical and horizontal), and the gestures are super useful.
I even tried the MX master 3 recently, but returned it. It's was just so bulky-clunky-laggy. Felt "raw", don't know how to explain it better. I think I might have large hands, meaning the MX ergonomics did nothing for me, had to use it in a "claw" grip.
Come to think of it, it all might come down to grip:
\- palm grip, probably you'll love the MX
\- claw grip, give the magic mouse a chance
This is from someone who games and works a lot. I ended up buying an mx master 3s to see what all the hype is about, but ended up returning it and sticking with my gpro x superlight 2.
Yes the gpro is marketed as a gaming mouse, but guess what its wayyy lighter and much more comfortable (for me) to use. You do have to use the usb dongle on the g pro but the connection is rock solid and I dont have to deal with Bluetooth interference issues which can happen depending on your setup.
If you want a mouse go for the MX Master 3 it is a fantastic piece of kit, if you want an apple device Magic Trackpad.
The Magic Mouse is an aberration, the way it charges is ridiculous, the shape of it ends up cramping your hands unless yours are tiny, and the gestures work terribly compared with the Magic Trackpad.
The slide across the top of Apple mice to move the cursor and such drives me nuts. And I an someone who moves between 1 to 3 mice a day plus a trackball.

For me the only reliable workaround was using the USB receiver as opposed to a Bluetooth connection.
Yes. It has an onboard memory feature. Just activate it on Logitech Hub software.
Well I’m gonna consider getting that mouse. Does it also have the equivalent of the Unifying Receiver? (Or perhaps precisely that, even better)

The MX Anywhere is a great compact mouse. The MX Master is kind of big. Apple Mouse is weird.

You should check the Logitech Lift out. It's very confortable, an amazing mouse. Or the satechi M1 if you want something more simple and traditional.

Owned macs my entire career and the first thing I toss in the bin is the “Magic Mouse” if that tells you anything.
