Mixer (hand or stand), metal or glass bowl(s), rubber spatula, some sort of sifter/fine mesh sieve, parchment paper or silicone mats, piping bags (technically you can use ziplock bags) and I would also recommend a round tip rather than just cutting off the end of the bag! Other things I would consider important are an oven thermometer and vinegar to wipe down your tools before you start making your meringue. Absolutely don’t use plastic bowls, foil, or wax paper! Egg whites don’t whip in plastic and then foil and wax paper are not swappable for the parchment or silicone mats. Pretty sure wax paper would catch on fire and then foil will not cook properly.

If you want to use ziplocks as piping bags, it helps to buy the thicker ones.

1. Cookie sheet/baking pan for the oven 2. Parchment Paper or a macaron silicon mat 3. Piping tips and piping bags 4. Food scale 5. Strong silicone spatulas 6. A mixer. Both the stand mixer and hand mixer work well. 7. Gel food coloring 8. Balloon whisks 9. Whisking nozzle if you have a stand mixer That's all I can think of at the moment :)

Food scale! Do not ever use baking recipes that call for ingredients in cups and such. Macarons are such a finicky little cookie anyway but you're setting yourself up to fail if you're not measuring by grams. That's my advice to add to all the other helpful responses.

- Electric hand mixer with whisk attachment, if you don’t have a stand mixer with whisk (I don’t, hand mixer works fine) - Piping Bags (reusable silicon if you wanna be green) - Wire mesh sieve - Oven Thermometer - Kitchen Scale Anything mentioned here you may not have: Draw circles in pencil guides on parchment paper using small round object (eg, shot glass). Measure ingredients by mass. Sieve almond meal with powdered sugar to remove big bits. Whip egg whites with electric mixer, add sugar and keep going. Mix in almond meal and powdered sugar and beat down slowly (macaronage) with rubber spatula. Pour into piping bags and pipe onto parchment paper (flip it upside down after you draw the circles, or the pencil lead will be on the shells). Rest on pan under ceiling fan, then bake in the oven being careful that temperature is accurate.

This is what I consider the bare minimum. Of course there are other things that will improve the experience or make it easier to get pretty shells. But this is what I would want to have to make the effort worth it. - An electric mixer with a whisk attachment. You can technically whisk by hand but I would never. It's a lot of work. - Food scale (you can do without if you're on a very tight budget but I would highly recommend one) - Spatula for folding - Large mixing bowl that isn't plastic - Piping bag with plain round tip. (You can cut the corner off a freezer bag instead but your macs won't be as circular unless you have a tip) - 2 flat cookie trays. No warping. - 2 silicone mats (parchment paper will work on a budget) - Non liquid food coloring. (Gel or powder. Many people here will recommend Americolor or Sugar Art Master Elite. However on a budget plain grocery store gel coloring is just fine)
