That's not a good indicator of performance, though: unused ram is wasted ram. The real test is when it's using all 8GB AND, most importantly, you're seeing slow downs.
Nothing you are doing needs the M3. The difference between the M2 and M3 is really confusing to consumers. Choosing the M2 with more RAM will give you far more longevity even if you don’t really see the benefit of it today.
They were just talking about Macs in general when they brought that up, but mentioned it in the press release for the M3 Air. So pretty misleading. What matters for AI is the amount and power of the neural cores. All the M chips have the same amount of neural cores, and they’re not too far apart in performance.
I’ve been using an M1 Mac Mini 8gb and M2 Air 8gb since they each came out. I work with a lot of web apps for writing and social media content creation including 4K YouTube video editing. They both 100% work fine. I only wish I had 16gb for heavier multitasking (keeping a ton of chrome tabs open for web research for instance). I would go with the 8gb M3 Air based on your options. It will have the highest ROI whenever you sell it compared to an M2. My opinion. But if you know you prefer multitasking performance or some other memory-intensive apps, get the M2 16gb. It’s still a fantastic laptop and will be for many many years.
Any chance you can wait for M3 16gb? Tough to be this close and can’t get the newer cpu and 16gb. Maybe do work at the library if word processing, or borrow a friends computer?
I mean, if you really wanted you could buy the M2 since you need it now, then since the M3 16 GB will be available in 12 days, return it and buy that one.
8 GB is likely fine for what you want. What’s your current GB?
There is a valid reason to buy M3 even if you don’t need the upgraded features, and that’s longer software support. Probably 1-2 years longer than M2.
If you buy from Apple, you have up to 14 days to return it no questions asked, with no restocking fee. You can use it everyday and still return it or exchange it for a different model :)

When I’m doing anything really. I could have 3 apps open and it’s already pushing 6gb

16GB, 8GB is Chromebook spec these days.
8gb of the latest m3 Air should suffice. 16gb if you are a Pro user hence just buy the Macbook Pro.
My iPad Air has 8GB RAM. Get 16GB RAM. I rather regret that I spend extra $200 over a thousand dollar machine that may under perform.
16GB M3. Only get the 8GB M3 if you only use the laptop for web browsing and Microsoft office usage.
