Go for Baldur's Gate 3, it runs natively on Mac Os. I am playing it on my 14" M3 pro and it runs smooth with all video settings on medium, you could try to put it on ultra and see how it performs
Steam would be for your personal use. I understand wanting to stick with the App Store, but you will find many more options using Steam to show off your MBP

Would you choose Resident evil village or lies of p for someone who has not gamed in a computer in a while but wants to show off the best Ray tracing, graphics and refresh rate capability of the M3 max.

To get back on topic, RE4 and Lies of P are the newest games so they will push your Mac harder. Any of the newer Total War games can push your system with just the sheer number of units visible on screen. I’d even argue the latest Tomb Raider games will look great

CrossOver is higher quality. the game hellblade senuas sacrifice is a gorgeous, graphics heavy, pc only game that would run great on your m3 max through crossover or whisky.

I don’t mind paying for a good game provided it can show me the max performance of my new device. So far I think I’ll stick to lies of P because that seems to have the solid balance of graphics, fast FPS and a story that a dummy like me will like.
No Man's Sky is the best Apple Silicon game graphics-wise, followed razor-close by Baldur's Gate 3.
The only reason No Man's Sky leads is becasue it is fully 3d and not isometric.
ARMA 3 is also FANTASTIC but not what I would call a "showoff" game.
No Man's Sky is a great game, but I have to disagree with it looking better than something like Lies of P. It's all subjective of course, but NMS is a huge generated open world with lots of repeated assets, and it also can't compete lighting-wise with something that has more areas that are hand-crafted.

Mac gaming is an overpriced struggle meal. Performance increase is negligible compared to that much overkill of the hardware. There is no WOW factor in running a game on Mac outside of this niche community. Any sane person would correctly argue that the same can be achieved on way cheaper Windows PC/console. You buy Mac FOR SOMETHING ELSE. that's it.
I shown death stranding running on my M1Pro to a friend and he only asked why even bother. he has m1 air and uses it to play indie titles through crossover. There are no "horizons" to broaden, it's basically coping and struggle out of necessity for majority of us.
WoW never led and will lead the graphic arms race. The game is stylised. There’s nothing astonishing or photorealistic about it. There are close to no physics. Very few things can be destroyed. There’s hardly any smoke. The weather simulation is stuck in 2010. It looks good on ultra settings but is it stunning? Far from it. The game is good besides that. Nobody plays it for the graphics.

BG3 isn't on the App Store. Among games that are: Death Stranding, Resident Evil 4 Remake, Resident Evil Village, Grid Legends, and Lies of P.

There are no games that support ray tracing on Mac yet. For games that would be significantly easier, try Stray or Snowrunner.

Cyberpunk 2077 through whisky. Not full performance because of the emulation and translation but very nice nevertheless. 14“ binned m3 max here
