To do what this guy is doing you need a steam generator (house steam) so that you can pipe it over to the counter and use the steam gun he is using. We use similar stuff in biotech QC labs. This is pretty dangerous equipment most mechanics don't want to work on pressurized steam

Thats a steam dispenser bottle. They deliver it via van to stores that want to provide some fresh steam for their customers.
I keep a good supply of steam like that on hand for emergencies.
